Stuffed Peppers My Way

These are probably the best stuffed peppers I've ever made. I'm sure it would have been perfect as is, but I had a zucchini that I wanted to use up and I also added garlic and a little bit of pesto. I didn't have a tomato but I did have some crushed tomatoes and I think it made it even better. Served them up as the main dish and they were wonderful.

Shredded Beef for Tacos

My husband loved this! I couldn't really get into the flavor...it tastes more like Memphis barbecue to me! HAHA! I had to keep adding taco seasoning to finally make it taste like a taco should...but I just really didn't like it. On the other hand, my husband ate the leftovers for 3 days for lunch...he thought it was wonderful!

Simple Texas Salsa

I wasn't a big fan of this recipe! It sat in my refrigerator forever and my husband wouldn't even touch it! He LOVES salsa! Of course, I was going through morning sickness at the time also...maybe that made a difference! I think the recipe has the potential to be great with fresh tomatoes. I just don't like the sweet taste of a canned stewed tomato!

Chicken Quesadillas

These are THE BEST quesadillas I've ever made! I used to make the Campbell's soup recipe but these were so much better and everything stayed together and there was no mess! I add a little red onion for color and flavor but that was it! Loved it!

Mexican Rice II

I thought it tasted just like what you would get at an authentic Mexican restaurant! I wasn't sure about how it would turn out but it was great! I used 1 1/2 cups broth and 1/2 cup sauce. I will be making this again!

Outrageous Caesar Salad

I didn't think it tasted like a caesar dressing at all! In fact, I think the coddled egg made me sick and nauseous all night! The croutons were good though. I'll be looking for something else...

Super Sausage Stuffed Mushrooms

Great appetizer! People that didn't even like mushrooms loved this! I think this recipe calls for A LOT of spinach...maybe a little too much?? After filling the mushroom caps with the mixture, I sprinkled them with extra parmesan before putting them in the oven. Yum!

Italian Meatballs

I liked these meatballs but I feel like they're missing something! I didn't use 3 POUNDS of beef...that's WAY TOO MUCH! I used 2 lbs. and that made about 50 meatballs...WOW! Maybe they need more garlic...or some onions?? I did not use the dry onion soup mix because I read that most people thought it was too strong. DO NOT PUT THEM IN THE OVEN FOR AN HOUR! I only had mine in the oven for about 30 minutes and they probably needed only 25 minutes. No need to simmer for 4 hours...30 minutes is all you need. Might try to work with this one a little.

Best Marinara Sauce Yet

I tried this recipe last night for a dinner party and it was the BEST sauce I've ever had. I'll never have sauce from a jar again! I doubled the recipe and put what was left in the freezer. I added more garlic and onions because I love them so much and I only used about a 1/4 cup of wine. I also decided that it had a little too much "zip" to it and added a little more than a tablespoon of sugar. I also suggest adding about 3 or 4 tablespoons of basil to the recipe. Don't forget to SAUTE the onions because I believe it makes a difference! Let it simmer for about an hour and I guarantee you'll love it and will never go back to the store for another jar of anything else!
