Baked Spaghetti I

This is a very tasty meal--my only teeny complaint was that I found the texture to be a little bit 'gummy'. That may be due to the different brand of pasta I used for the first time. I used a combination of mozzarella and medium cheddar cheeses and threw in about half a cup of sliced black olives. It only took two meals for just my husband and I to finish off the whole thing--delicious!

Cinnamon Bread I

I baked this cinnamon bread to serve at coffee time at my church. At one point I saw a five-year-old hand scooping three slices at once while muttering "I like this. . . " He obviously wasn't the only one, as this bread disappeared in a matter of minutes.

Disappearing Marshmallow Brownies

If you are looking for an elegant bar that is almost too pretty to eat, forget this one. But if you're looking for rich, chewy, ooey, gooey, can't eat just one (or three) delight--this is the ticket! Really fun and soooooo delicious!!!!

Beth's Spicy Oatmeal Raisin Cookies

I didn't think I liked oatmeal cookies--until NOW! These are wonderful--the flavour! the chewiness! Raisins aren't my favourite things so I left them out; believe me, I never missed them. Bake these cookies today; they are a real treat!

Delicious Raspberry Oatmeal Cookie Bars

Applesauce Bread I

This is an excellent recipe--I made mini-muffins instead of two loaves and they turned out great! I also added some nutmeg and allspice and drizzled an icing sugar glaze over the top of the muffins. Very moist with a nice "apple pie" flavour.

One of Everything

Even though I omitted the coconut, these are absolutely great! When removing the cookies from the cookie sheet be extremely gentle--or the cookie will crumble into a heap of little bits (which by the way, are darn delicious. . .) However, after a few minutes of cooling, they hold together just fine.

S'More Bars I

Several things to mention: Since S'Mores MUST include graham crackers, I replaced 1/2 cup of the flour with 1/2 cup graham cracker crumbs. Spreading the batter in the pan is a mucky job, but ultimately it's worth it. I chose to broil the marshmallows until lightly browned, which only takes about 40 seconds in my oven--unfortunately, on my first try I let them sit for about a minute and a half--hey, at least I know my smoke detector works. . . Finally, these are not by any means an elegant or sophisticated bar--but kids positively inhale them! They are ooey, gooey, sticky delicious fun--I should know, I've certainly eaten my share today.

Maple Muffins

How delightful to find a recipe that is so quick and easy--and delicious! These were refreshing in that they are very light tasting--nice texture with just a subtle, wonderful maple taste without being overly sweet.

Lemon Icing

Absolutely melt-in-your-mouth icing--substitute freshly squeezed orange juice for the lemon juice and this is perfect for the Orange Cake recipe--LOVE this!

Dump Bars

Quick, easy and delicious! Like many baked items, although they kept for a couple of days, I found they were really at their best the day I baked them. Also, I used a little less oil than called for and they were still very moist. My only complaint--that name has got to go!!! How about "Totally Awesome Brownies". . .

Prize Winning Oatmeal Drop Cookies

I made these cookies with chocolate chips. They taste great, with a delicious hint of cinnamon; unfortunately, I found them to be very dry. Next time I think I'll add a bit of oil or applesauce to offset this problem, because they are tasty.

Mountain Tops

Although these cookies took a fair bit of time to make, I thought it would be worth it. I must have done something wrong because when I finally tried one, I really didn't like it that much. I love chocolate and frosting so I'd be willing to try these again--has anyone else made these? Any hints as to what I might have goofed up on?

Secret Chocolate Fantasy Cake

A truly exceptional and decadent cake! I didn't have enough hazelnut liqueur so I made up the difference with amaretto. This is so rich and chocolately--and that frosting! I nearly swooned every time I lifted the cake cover. Fabulous--(and it does indeed freeze very well.)

Award Winning Soft Chocolate Chip Cookies

Way too delicious--love the chewy texture! I decided to half the recipe, but accidentally put in the whole amount of baking soda. Then I couldn't add nuts because of allergies in the group I was baking some of these for. Even so, these cookies were so good I actually had eight of them for lunch one day (I'm almost afraid to bake them correctly and with nuts. . .)
