Chicken Cordon Bleu II

Reviewed: Apr. 26, 2007
Absolutely amazing. I breaded the chicken with egg and paprika seasoned breadcrumbs before browning it, and I doubled the cream sauce to use with steamed broccoli. Everyone LOVED it!

Lazygirl's Ground Turkey Stroganoff

Reviewed: May 24, 2006
Yum! This is how I changed it. Browned a lb of ground turkey, drained and set aside. Cooked a medium onion and a few cloves of garlic in some olive oil, then added the turkey back to the skillet. Added a can of cream of chicken soup, a few splashes of chicken broth to thin to the consistency I like, about a half a cup of sour cream. I also added a can of peas and a few generous shakes of paprika and cayenne pepper. Turned out wonderful and very thick!

Italian Tacos

Reviewed: Feb. 4, 2006
Sorry, I just didn't like this one at all. Maybe it was because the family, when they saw it being cooked (even after I told them repeatedly it wasn't) expected traditional taco's. The only thing I added was that I ended up mixing the meat and the sauce together in one sauce pan because the meat was so dry, after a few tacos we thought it needed to be stuck together with the sauce. Anyways, I give this a two because we ate them, but will not be making this one again. Just didn't do it for this Italian-loving family. Sorry!

Down Home Macaroni and Cheese

Reviewed: Jan. 18, 2006
This mac and cheese is super good. Very heavy but it's great if that's what you're looking for! I followed Breeze's suggestions (click on "most helpful" above the comments and they should be on top of that list) but be careful with that shake of cayenne. Shook a bit too much once and although it didn't show up much when it was first served, the leftovers were much hotter :) The ritz crackers, I think, are a wonderful addition to this. They make it sooooooooooooo good :)

Italian Spaghetti Sauce with Meatballs

Reviewed: Jan. 18, 2006
My family loves these meatballs! I have this meatball recipe on my fridge and I make it once a week, although it's so simple I could make it by memory now! I use jarred pasta sauce and cook the raw meatballs right in the sauce for about thirty minutes. I also make my meatballs half the size and they are still plenty big. These are also very good to make the night before and store in the refridgerator. These are not too dry by the recipe (at least not when I make them, lol) and the taste is amazing!

Feta Chicken

Reviewed: Jan. 18, 2006
This was pretty good. Nobody complained, but there weren't rave reviews. I also took the chicken out at the recommended time and cut into it only to have pink juice run down my plate. So next time I'll cook these longer, of course. Will cook again, good weekday meal.

Baked Beans II

Reviewed: Jan. 2, 2006
This was a huge hit with the family. Served this as a main dish and mixed shredded pork (boston butt) cooked the night before. Added extra pre-cooked strips of bacon. This was wonderful, VERY sweet. Thanks!

Sweet Potato Pie II

Reviewed: Nov. 25, 2005
I liked this pie alot. However, I'm not sure what I did wrong, but it didn't set up in the middle as well as I would have liked. I ended up serving it with a spoon because even after doubling the baking time, it was still very runny. The flavor was awesome, though!

Pumpkin Cheesecake II

This was a very easy cheesecake that baked up perfectly. I substituted two TBS of pumpkin spice for all of the other spices. Was very dense and luscious, everyone loved it.

Old Time Chicken Divan

Reviewed: Oct. 3, 2005
This dish didn't really do it for me. I didn't know how long to wait for it to thicken, and I ended up stirring for 30 minutes to have the same consistency as I had begun with. This turned into a very very thin, soupy, bland mixture that I had to eat with a fork and then a spoon. The effort put into the recipe was not at all worth the results. I'm not sure what I did wrong! :( Two stars because the flavor was edible.
