Grampa's Coriander Turkey Sausage

Yum!! So easy and delicious. Cooked some of these up with roasted potatoes, roasted broccoli and fried eggs... a great 'comfort meal' for a chilly evening. The coriander really does make it taste like sausage! I ground up whole seeds... lots of 'em. :)

Butternut Squash Soup

AMAZING recipe, thank you!!! I only had half the amount of cream cheese recommended and it was perfect. I didn't have cayenne OR marjoram; I added chili powder and rosemary. I roasted the squash first as some suggested.

Scalloped Potatoes and Onions

This was fantastic... thank you Dorothy! So creamy and tasty. The only change I made was adding a bit of parmesan into the sauce. I made such a big pan of this in hopes of enjoying half of it the next day, but it was all gone at dinnertime. YUM!

Spanish Potato Omelet

I have got to give this five stars, because it is just amazing. A Spanish friend made this for me once and this tastes just like hers, with the adjustments I made: I leave out the tomatoes and green onions (because she said in Spain they don't put them in), and it tastes so good without them that I can't bear to try it WITH them! :) One other tip: After I cook the potatoes and onions in oil, I put the eggs and potatoes together (combine very gently) in a bowl, and let it sit for 20-30 minutes. The cooked potatoes absorbs the egg, and it's just SO moist. Last thing... I find that the dish tastes best if I turn the heat off shortly before it feels right to do so. It still looks a teeny bit moist and eggy inside - but when I cook it any longer it gets much drier. Mmmmm moist! Thanks Patty!

Easy Apple Cinnamon Muffins

I thought these were fantastic! I didn't change a thing; I was just careful not to fill the muffin tins to the top, so they wouldn't overflow and cause a mess - as per earlier reviews. Oh, I doubled the cinnamon too. The topping was great, and I got several requests for the recipe. Thanks Mindy! :)

Kalamata Stuffed Mushrooms

I have to give these five stars too. They were SO delicious! It was my first time to make stuffed mushrooms. I didn't have all the ingredients... didn't have olives, for example... and I added diced tomatoes to the olive oil mix. They looked so pretty and tasted divine. I will definitely add this recipe box.

Baingan Bharta (Eggplant Curry)

Oh man, this one was SOOO delicious! Just like restaurant food, like other reviewers say. I added some red bell pepper strips because I had them, and it added nice colour. I also used ginger cloves and minced ginger because I didn't have the paste. And lastly, like other reviewers, I found that adding 1/2 or 3/4 cup water near the end made it a bit more "saucy". But wow, I'm sending this recipe to all my friends. YUM! Thanks!

Yum! Nice and soft and lighter than meatballs. I'd probably add a bit more soy sauce or something else for a little more kick next time. Ginger? Red pepper flakes or chili sauce? I'll try! Thanks for this recipe!
