Pan Fried Daikon Cake

I found that little changes to the recipe don't really matter much- I didn't have Italian seasoned bread crumbs, so used Panko and threw in some Penzyes "Pizza Seasoning"- also used "Italian" seasoning as an extra. Didn't have red onion once, so I've used green onion, and also shallots in the past- I've dressed them with mayo mixed with dill, lemon, and garlic. I fry them in ghee mixed with grape seed oil- but I think any oil or butter would be great. They're a big hit every time I make them- they are delicious! One tip- not only do I salt and let rest over night to remove water, I then throw the grated radish into a towel and squeeze to remove more. The drier the radish is, the easier is stays together once you throw in the rest of the ingredients. Thanks so much for the recipe- this is a keeper!!

The Best Red Enchilada Sauce

Oatmeal Pancakes

Just the recipe I was looking for- I had oatmeal pancakes at a cafe near by and they were delicious- the texture of these pancakes exactly resembles what I had there. I did not have buttermilk on hand- I mixed 2% with 1.5 tablespoons of cider vinegar and added a bit extra flour to thicken it up- if you use whole milk- you probably won't need to add extra flour - the thinner milks make for a thinner "buttermilk" if you are adding acids. Additionally- I used 2 tbls of grape seed oil in place of the butter.

Coconut Cake III

I did not follow the recipe exactly- and perhaps should not rate this- but it was DELICIOUS! Minimal changes I made- I used coconut flavored instant pudding along with a dark chocolate cake mix. The toasted coconut gave the overall flavor such a unique taste and texture- for all coconut lovers- this recipe is divine. I made this for my significant other for his birthday and he loved it (coconut fiend).

Thai Green Curry Chicken

Quite good- the green curry I used is by the label called "Maesri" and I used about 1 1/2 tbls as opposed to two- it is quite "hot". I used one can of coconut milk, reduced the sugar to 1 tbls and added a chopped green pepper. Yes- I altered the recipe- but had I followed it exactly- I know it would have been too sweet- that's the reason for a 4 star- but it's all personal taste. I served it with Thai sticky rice and steamed broccoli--Easy and quick to make.

Mediterranean Stuffed Swordfish

Simply put- delicious. I used a sesame/ginger seasoning on the fish- and for the stuffing, mixed previously frozen spinach with feta and shallots.........served it with an aioli made of mayo,lemon, dijon, and capers...........WONDERFUL! and simple.

African Sweet Potato and Peanut Soup

As is, I give it a 4 star. I actually used 4 cups of vegetable broth, 2 cups of chicken broth, 2 loaded tsps of cumin and coriander, 1/4 teaspoon of cayenne, about 4 tbls of peanut butter, and added half of a jalepeno pepper. I omitted the peanuts and used chunky peanut butter instead. With the revisions, it came out much more flavorful and delicious. We paired this with a simple tuna melt which was divine.

Spicy Turkey Burgers

Tasty for a turkey burger. I was missing some ingrediants so I used shallots in place of onions and grey poupon in place of the dry mustard. It was more wet than I wanted so I added some bread crumbs. The burgers tasted more like meatballs than burgers but they were good. I cut up the leftovers the next day and fried them with onions and eggs and served them with toast. It was wonderful!

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

Tasty- but very rich. If you like to cook- it's really not that time consuming provided you are well organized. Start the sauce first and as you finish up with the sides- the sauce is done. I seared the filets on both sides and then baked them in the oven at 350 for about 15 minutes. I substituted portobellos for the crimini mushrooms and it was great. I served this with pan fried sweet potatoes and a nice romaine salad dressed with balsmaic vinigrette and olive oil. I wouldn't double the stuffing- less is definitely more in this case. A great meal and much less than what you would pay for at a restaurant!
