Peppy's Pita Bread

Reviewed: Jan. 4, 2011
I had everything I needed to make gyros except the pita bread. With gasoline costing over $3 per gallon, I decided to make the bread rather than take the 30 mile round trip to my nearest grocery. I did not use my bread machine and halved the recipe; it turned out WONDERFUL! I highly recommend this recipe.

Phyllo Turnovers with Shrimp and Ricotta Filling

Reviewed: Dec. 31, 2009
Don't bother - very bland and too much work for the end result.

Maple Walnut Pie

Reviewed: Oct. 6, 2009
Very good but I wonder if it is really necessary to heat the syrup/butter mixture first? I almost ended up with with scrambled eggs untill I waited for the syrup mixture to cool. I think next time I will just melt the butter on its own and proceed as with pecan pie; no need to heat the sugar mix. Also, since I am fortunate to have access to real maple syrup, I didn't use the artificial flavoring, cut back brown sugar to 1/3 cup and still this was too sweet; I will eliminate the brown sugar altogether next time- but there will definately BE a next time- YUMMY!

Sausage Egg Squares

Reviewed: Jan. 6, 2009
This was enjoyed by my whole family. We are only 4 people, so I cut the recipe in half, but forgot to reduce the size of the baking pan (oops!) so I ended up mixing a couple more eggs with a 1/4 cup each of milk and baking mix, and it turned out fine. My daughter thought it was a tad bit dry so she topped it with salsa and proclaimed it then to be perfect!!

Sage Sausage Bread

Fed a crowd with this and was easy to make. I used the pan I browned sausage in to make a momlette, And yes, the leftovers worked too!

Pecan Crescents

Reviewed: Dec. 13, 2008
THANK YOU Cheryl for this recipe! My Grandmother made these, my mother made them, and I have been making them for 30 years and suddenly my copy of the recipe has gone missing. I would never hear the end of it if I didn't make them this Christmas!!!

Pretty Chicken Marinade

Reviewed: Jul. 8, 2008
I made this the other day using chicken quarters and it was very, very good. I added 1/3 c honey for a touch of sweetness and the chicken was a lovely carmel color. I am going to make this again tonight using pork tenderlion cutlets and am expecting excellent results once again! Thanks, Tara!

Strawberry Dream Cake I

Reviewed: Jun. 3, 2008
I made this cake for my husband's 50th birthday and was very dissapointed. The frosting was excellent, but the cake itself was far too dense for our liking. It weighed about a ton!! Won't make this again.

Galaktoboureko

Reviewed: Jan. 8, 2008
This was a lot of work, using a lot of ingredients and time. I served it with a greek dinner for five and we barely ate a third of it. The remainder sat in the fridge for a week before I tossed it. We found it quite bland; not unlike tapioca pudding with phyllo. Sorry, but next time I need a Greek dessert I will stick with balkava or lemon cake.

Spinach Strudels

Reviewed: Aug. 8, 2007
This was wonderful! I also doubled the filling, and cheated on brushing each layer of phyllo with butter by spraying every other layer with canola oil. I made a ten-serving size to serve with gyros for three people and there wasn't a crumb left over!

Crab Salad Supreme

Reviewed: May 14, 2007
This was not nearly as good as the other reviews had me expect. It turned out too runny for my taste, and the chili sauce turned the dressing an unappetizing color. If I were to make this again, I would leave the chili sauce out completely, reduce the celery seed at least by half, and it might be O.K.

Mexican Bean Salad

This was a HUGE hit at my picnic. Even my husband liked it, and he isn't a fan of green peppers! A very welcome change from traditional 3 bean salad.

Simple Tuna Melts

Reviewed: Apr. 12, 2007
I agree that this definately needs some mayo to hold together. Otherwise it was great. I, too, used whole wheat bread toasted first. Also used swiss cheese because that's what I had, but I thought it was great, if a tad bit dry.

Rhubarb Cream Pie

Reviewed: Feb. 27, 2007
This is almost identical to my grandmother's recipe, but hers calls for 3 cups rhubarb, only 3 T. flour and two eggs. This might eliminate the spill-over encountered by another reviewer. It shouldn't be runny; be sure to cool completely before cutting. This is, in my opinion, the ONLY rhubarb pie to make, ever!!!!

Hot Shrimp Fruit Salad

Reviewed: Jul. 17, 2006
Oh YUM! This was SO good! I had some purple cabbage and added that, along with a few strawberries on each plate. I did include the sugar in the dressing because my husband prefers a sweeter dressing, and it was fine. I will definately make this again, it is an ideal summer meal!

Sesame Seared Salmon

Reviewed: Nov. 2, 2005
I LOVE salmon, so I ran right out and bought the ingredients for this dish. I don't love handling fish, however, so I changed the method some. I fired up the grill, put the romaine and mango on the serving dish, and stir-fried the remaining ingredients. Then I topped the romaine with the peas and salmon. I loved the flavor of this dish!
