I made this delicious bread today for the first time and I had to change a few things to make it a total 5-star recipe. I am an "organic" person and I used ALL organic products in this recipe. I had to alter a couple of the ingredients to make this more delicious and organic. The changes are as followed: I used ORGANIC sugar and I used 1 1/2C of organic white sugar and 1 1/2C of organic brown sugar (TOTALLING 3 Cups as listed), I also used 1 C of ORGANIC COCONUT oil (instead of veg. oil), I used 3 C of ORGANIC whole wheat pastry flour, 1/4 C ORGANIC ground flax seed, 1/4 C ORGANIC unprocessed bran (TOTALLYING 3 1/2 C as recipe lists) and the last thing I did was use FRESH GRATED ORGANIC GINGER (instead of powdered ginger). I bought organic canned pumpkin and organic spices, too. The best part of the changes was definitely the fresh ginger. The bread just bursts with flavor and it's all due to the fresh ginger. I highly recommend these changes. The bread was also very, very moist!!! Instead of using PAM cooking spray in the pans, I recommend using butter (ORGANIC, of course). My family couldn't even wait to have a slice. As soon as it was cool enough to eat, we polished off 1/2 a loaf!!! Can't wait until breakfast time to enjoy more bread with my morning coffee!!!
