Chili Chicken 'N' Rice

This is so delicious and easy! I saute a chopped onion in butter, and then add three boneless chicken breasts cut into bite-size pieces. I also toss in minced garlic and pepper for a little extra flavor. I then follow the rest of the recipe, except for using medium shredded cheddar cheese on top. So much better and healthier than processed cheese! Great recipe overall.

Cream-Filled Cupcakes

These are amazing! I always substitute brewed coffee for the water. It doesn't make them taste like coffee, it just brings out the chocolate flavor even more. So delicious.

Shepherd's Pie VI

This was a great base recipe to be tweaked to fit your individual taste. I cooked the ground beef and onions together, adding garlic salt and oregano. I omitted the ketchup and beef broth, and put in a can of tomato soup instead. I put this in a 9x13 pan, and then added a layer of chopped carrots instead of mashed. I did boil them beforehand to ensure they would be cooked enough. Then I layered a can of green peas, and a can of sweet corn. I mashed my potatoes with sour cream and rosemary, put this over the veggies and topped with shredded cheese. I know, so many changes- but it was incredible and well worth it!

J.P.'s Big Daddy Biscuits

These are incredible! I have been searching for the perfect biscuit to complement sausage gravy, and this it it. It's crispy on the outside and fluffy on the inside. Perfection! I only knead it a couple times until the dough holds together. Then I pat it out into a circle, fold it in half, turn the dough, and repeat several times. This builds nice flaky layers into the dough.

Baked Teriyaki Chicken

This is my favorite teriyaki chicken recipe. The first time I made it exactly as the recipe said, and it was great. The second time I reduced the sugar, added extra garlic, and added a half teaspoon of chili powder. It was the perfect kick to balance out the sweetness, and my fiance liked it much more the second time. I always have this sauce in a bottle in my fridge- I make a quadruple batch a couple times a month. I chop up boneless chicken breasts and mix with the sauce in a bowl. Then I let it marinate for about a half hour, or even overnight for a quick dinner the next day. I heat a little oil in a frying pan then cook the chicken and sauce until the chicken is done. It's fabulous poured over rice!

Ragu® No Boiling Lasagna

My fiance and I both liked this lasagna, but I think it would have been a little bland without my additions. I used whole wheat pasta noodles, which can soak up more liquid in this type of recipe, so I soaked them in hot water while I prepped the other ingredients. I chopped up half an onion and sauteed it, then added a pound of ground beef and cooked until browned. I poured both jars of pasta sauce into the beef, and added chopped parsley, oregano, and minced garlic. I also added an extra cup of shredded pepper jack cheese to the cheese mixture, and it turned out to be the perfect amount of cheese. This is a great starter recipe, but it definitely needs some custom additions to your liking.

Never Fail Biscuits

This is the biscuit recipe I've searched everywhere for! Flaky on the outside, soft and thick on the inside. I doubled the recipe and made about 18 instead of 24, and I think they were the perfect size. The only suggestion I would make would be to grate the butter in a food processor and then add it to the dry ingredients; it mixes right in and is much faster.

Creamy Rice Pudding

I made this with brown rice; it was good, though I found the consistency to be a little gluey when it was cooled. But that may have been because of the brown rice, which has a different consistency than that of white rice and is chewier. Anyways, I added more milk and that helped a little. I would have given it maybe three stars, but my two younger siblings both loved it. So four it is.

Delicious. A little crumbly, but I've never tried a recipe for this type of cookie that wasn't. This is the best recipe I've found for Peanut Butter Kiss cookies, as my siblings and I used to call them.

Kentucky Biscuits

Delicious! I was short on butter when I made them (and didn't realize this until aftter I had started making a double batch) so I used half shortening and half butter. I was a little skeptical on how they would turn out, but they were excellent. I can't wait to try them the right way! I also used half whole-wheat pastry flour as my family is health-conscious. They were very good and had nice flavor.

Excellent. I added more coconut; I always add extra coconut to recipes that call for it. They were everything they should be: sweet,chewy, crunchy, chocolate-y.
