Chicken Noodle Soup

I was impressed that this soup was so yummy AND so simple! I think sautéing the veggies in butter added great flavor. I would recommend cooking the noodles separately then adding them close to the time you serve the soup. The first time I made this, I added them to the pot as the recipe called for, but we didn't get to eat the soup until hours later, and the noodles turned to mush. Very delicious recipe!! New cold weather staple in our house! :)

Cilantro-Lime Dressing

I didn't have ginger root (in fact, I have no idea what it is!), but this has become my new favorite dressing! I served it over a salad of: salad greens, green onions, tomatoes, a can of rinsed black beans, and corn. The salad was also topped with marinated/grilled chicken strips and seasoned/grilled tortillas (I brushed soft tortillas with olive oil, sprinkled a fiesta seasoning on them, and grilled them for 3-4 min each side, then cut them into strips). This is an amazing, light, and summery meal! Thanks for the great dressing recipe :)

Creamy Ice Coffee

YUM!!! Great way to use up leftover coffee so it doesn't get wasted...refreshing on a hot & humid day. I topped mine with a pretty swirl of ReddiWhip...bummed I don't have chocolate syrup to drizzle over the top, but this still gets a FIVE! Thanks! :)

Southwestern Pasta Salad

This was the perfect solution for being bored with the typical "Italian" pasta salad! It's light, tasty, & super easy. The cilantro adds a wonderful flavor & the lime based dressing is refreshing. The next time I make it, I will add a small can of green chilies just for little kick. This was a big hit at a Memorial Day picnic...thanks!!!

Best Big, Fat, Chewy Chocolate Chip Cookie

Ever since my teenage daughter learned how to bake, my family RAVES about her chocolate chip cookies & teases me about hers being better than mine. (they were right!) That is about to change though bc I have finally found my "secret weapon!!!" these cookies are amazing!!!!! Thanks :)

Banana Oat Muffins

Delicious! I made this exactly as recipe suggested. My whole family loved them & my kids didn't even put butter on them! They were moist & flavorful. Thanks for a wonderful, healthy way to use up ripe bananas!

Slow Cooker Italian Chicken Alfredo

Amazing! Not just the taste of this, but that all family members gave it a big thumbs up! I made mine just a bit different. I didn't have dry Italian dressing mix, so I poured about 1/2 to 3/4 c. Tuscan Ital. dressing over 2 very large chicken breasts and cooked on high for 3 hrs. in my crock pot. When I checked it, the meat just fell apart, so I decided to shred the chicken with a fork. There was a fair amount of "broth" that I just mixed in. Then I added the cream cheese & soup mixture and cooked on low for an hour. Served it up over bow ties and topped it off with Parmesan ~ YUM! A new quick and easy dish for my family...thanks!

Blueberry Coffee Cake III

Yum! I was out of white sugar, so I subbed in brown sugar (same amount), and it still came out beautifully. I usually hesitate making coffee cakes because they are often dry ~ not so with this one! Will definitely be using this recipe again...thanks!

Islander Artichoke and Spinach Dip

This was a HUGE hit at a family party! I served the dip with a mix of blue corn tortilla chips & regular tortilla chips; it looked pretty! I typically don't like the taste of ranch, but it's perfect in this recipe! I used low fat mayo (olive oil based) and low fat sour cream & omitted the water chestnuts. Easy and delicious ~ thanks for sharing! :)

Plain Potato Soup

All 5 of us gave this a thumbs up, including a very picky 7 yr old! I used fat free evap milk, and it was fine. For fun, I added a "toppings buffet" that included low sodium crumbled bacon, low fat shredded cheddar, & chopped green onions. I used my immersion blender as suggested, and it worked like a charm! My husband suggested next time keeping some chunks of potatoes in the soup, but I thought it was PERFECT!!! Thanks for a quick and easy meal :)

Favorite Old Fashioned Gingerbread

I made this in a bundt pan, and it looked pretty AND tasted great! I doubled the spices and added a small box of vanilla pudding mix to the batter. We topped it with whipped cream and cinnamon/sugar. The cake was very moist and delicious!

Downeast Maine Pumpkin Bread

Perfect balance of spices and very moist. I baked MANY mini loaves and gave them to friends for Christmas along with a pretty container of Cinnamon Honey Butter (recipe also on this site). Made a nice gift!

Hearty Ham Casserole

My family of 5 loved this! I only had creamed corn on hand, and it worked well. We buttered baked crescent rolls (from the dairy aisle!) and topped them with the ham casserole ~ delicious!
