Busy Day Chicken Rice Casserole

I had such high hopes for this recipe, but my kids refused to eat this. I've never been a fan of 'Onion Soup' anything so I'm not sure why I thought we would like it. It looked so easy, so I really really wanted it to work out.

Peach Pie

I made the mistake of not reading reviews before making and it was a runny mess and the crust was not cooked. I am going to try this recipe again because I love the simplicity of it, but next time I'll use the advice listed below and maybe even update this review. I'm determined to work this out because I love peach pie!

Sarah's Salsa

I needed a good, quick salsa recipe and this one was the perfect starting point for me. I made a few changes based on my own tastes. I used 1 can of regular diced tomatoes and 1 can of Rotel tomatoes (the ones with green chiles). I use lime instead of lemon because that just makes more sense. I use an entire onion, again my taste. 2 or 3 cloves of fresh garlic. No hot sauce because that's just weird in salsa, and I use 1 or 2 serano peppers instead of jalapenos because I think it's a better tasting pepper. I mix this up in a food processor and let sit overnight. It's the only salsa I make now.

Chicken and Dumplings III

My kids gobbled this up! This was a great starting point for my version. I used chicken breasts and I threw additional veggies and a couple cubed potatoes and let it cook slowly for a couple hours before adding the biscuits.

Classic Baked Mostaccioli

This is great with modifications. Very easy to prepare. I used spicy italian sausage (sweet would be good too) and mixed in extra sauce because it seemed too dry otherwise. What I like about this recipe is that you can separate the recipe into two dishes and freeze one for later....just hold the cheese till you are ready to bake the 2nd one.

Down Home Macaroni and Cheese

I just thought this was okay. I'm not a fan of processed cheese at all. The texture of the sauce was great, but was too bland. I will give this recipe another chance but I'll not do a crumb topping, maybe use a sharper cheese, more spices....something. Needs more flavor!

This was an expensive dish but was EASY and EXCELLENT! I had to make a few substitutions due to local availability and personal taste. But I don't think it matters too much which seafood you choose. I served with sour dough and a green salad.

Slow Cooker Barbeque

I'm struggling with this review. I have never been a big fan of any shredded meat sandwiches, I chose this recipe to serve at my son's birthday party specifically for the adults. We did a Thomas Train theme and I needed to create a 'hobo' like meal, so I chose a shredded meat recipe. I used a boneless chuck roast that shriveled down to very little. The meat required actual cutting, not shredding after 7 hours on low. But after I tossed it all back in the crockpot, it did tenderize nicely after another couple of hours. I used Famous Dave's Texas Pit BBQ sauce. I would suggest leaving out the garlic and onion powder because I think the sauce has enough flavor. Not one person said they liked it, but it was gone by the end of the party. Maybe silence is consent? I don't know the hot dogs were gone too. It wasn't bad, it wasn't spectacular, it was just okay. I will probably not do this recipe again.

Texas Ranch Potato Salad

This stuff is GOOD! After the initital cool down and I stirred the dressing and bacon in, I couldn't stop sampling it! I disagree with an earlier review that it's better the next day...I actually liked it immediately after I put it all together because the bacon was still crunchy. I think next time I will keep everything separate in the refrigerator until serving time, then throw together. I prepared this one day ahead of time and while it was still very good, it lost the cruch of the bacon...which I really liked. Great recipe! I will make this again and again!

Gary's Stuffed Mushrooms

Made this as a Thanksgiving appetizer and everyone loved it! I wanted it to be bite size, so I cut the actual recipe in half and substituted the large mushrooms with a pound of regular white button mushrooms. Will do this again!

Filipino Lumpia

This reminded me exactly of the lumpia we used to beg for every year when our family friends made their annual batch. LOVED it! I served it with some home made sweet and sour. Although time consuming, I will triple the recipe and freeze it next time.
