Chicken Milano

Reviewed: May 29, 2006
I really dont know why this recipe is rated so highly. The flavor is so odd, bland, and just not very good at all. Followed exactly and couldnt figure out what was wrong with it. Fiancee said that maybe it needs more spice, possibly grilled shrimp instead of chicken and less SD tomato. i dont know, doubt ill make again, a lot of work. chicken was good and moist, but thats about it.

Blueberry Crumb Bars

Reviewed: May 23, 2006
These are good. Easy to make. Even better with some vanilla ice cream. The flavors are simple and pure. The fruit comes through nicely. Nothing extravagent. The only thing i did different is that i ran out of blueberries so i halved the recipe with strawberries. I spread blueberry on one half and strawberries on the other. Tasted good. Not too sweet. Wasnt able to cut into bars, too crumbly.

Runzas (Bierocks)

Reviewed: May 17, 2006
These were good. Added more seasoning which i knew id have to do. Being from Texas, we like food spicier, so we ended up dipping them in Tabasco. Fiance said we should "Texan them up" with jalapeno, garlic, cayenne and a little chili powder and cumin on the meat. LOL....But we did try the authentic way, and it was good. We like to play with recipies though. THANKS!!

Easy Batter Fruit Cobbler

Reviewed: May 17, 2006
I was all excited about making a strawberry cobbler, and it flopped. I guess i used too many strawberries or something b/c the center would not rise or bake. I had to bake it so long that the sides got VERY brown. From the pic i took of it, it looks baked, HA HA, but it wasnt underneath. Darn the luck!! Still had good flavor around the edges that did bake. I sampled a little piece so i could rate the flavor.

Cooking Light magazine's Mexican Chicken Casserole

Reviewed: May 17, 2006
This could be a 4 star, but im not quite sure how yet. I will have to play with it. I followed it exactly and it did turn out OK, but it could be better. Still good. I guess we just like a lot spicier food. Needed cayenne or tabasco. Otherwise good. Creamy.

Golden Sweet Cornbread

Reviewed: May 17, 2006
I am giving this a 3 b/c i did make a few changes. And with the changes my fiance stated he had never tried "from scratch" cornbread, but that this was the best cornbread he has ever tried. Its very similar in taste (sweetness-wise) to the little boxes of Jiffy Corn Muffin Mix. Perfect sweetness for a savory supper. My changes, i dont have exact measurements for, b/c i did a little of this, little of that..etc.etc...but i cut back on oil, added corn and cheese.

Banana Bread Cookies

Reviewed: May 12, 2006
This is a wonderful recipe. Not too sweet, moist, fluffy and tasty. I halved this recipe, along with using margarine, and half whole wheat flour. I also added more banana. So good!! Oh- Also added pecans and walnuts!! But make alot, they disappear quickly. Another thing- No need for icing, just dust with powdered sugar, it will be all the sweetness you need. ****Edit:The only bad thing about these, is the tops get moist and soggy. Dont stack them on top of each other, they get very sticky.

Baked Ziti I

Reviewed: May 11, 2006
I give it 3 stars, but my fiance gives it 4 or 5. I make it for him b/c he likes this sort of thing. I make it very meaty and saucey. Both things i dont like. I think ground beef or ground meat/sausage ruins a good tomato sauce. That is my other change. I dont use a jar of sauce, i make my own. So its a good base recipe, i just prefer it without meat. The sour cream adds a little something. Which is good....A tang of sorts. Most of the time i add more than called for. :)

Soft and Chewy Peanut Butter Cookies

Reviewed: May 6, 2006
My man loved these cookies...They were good....but they spread a little too thin for my liking, but still good. We liked that the PB taste came through, but it wasnt overly sweet. A GREAT addition to half of the batter was a handful of milk choc. chips.....the tastes went together great! The only thing i didnt like is that about 2 days later....They got very brittle....and fell apart..but what can you expect 2-3 days later....So it wasnt that big of a deal. But they stayed soft for a good 1.5-2 days after baking..good cookie! ADDITION TO REVIEW**** Looks at some reviews again and whoever says this recipe wont work b/c of 3 eggs and only 2 c. flour is wrong. They do spread a little, but they stay moist and chewy and awesome for DAYS!!! So obviously, if you want hard, crackly cookies, these arent for you!! Hubby says they are the best PB cookies ever..and hes picky.

Pecan Pie Muffins

Reviewed: May 6, 2006
These little suckers are awesome....I used walnuts b/c thats what i had on hand....but i can imagine how much better they would be with pecans...But still....awesome.....I only baked them for about 12-15 minutes.....so they were still gooey inside....and crisp on the outside....these were so good....Sugar and fat...cant resist that!!!!! Oh..it made 24 perfect bit size mini muffins....Sprayed generously with Baking spray with flour....popped out easily!!!

Strawnana Bread

Reviewed: May 4, 2006
This bread was OK at best. I did as most other people did, using applesauce in place of oil, or adding less sugar than called for, etc etc.....But you can do that with many recipes and it bakes/cooks as though you followed the recipe exactly. Well, not with this one....It came out kind of rubbery and very dense. And after a while of cooling on a rack, it began to get wet on top which made it chewy and soggy. OH- And you cant taste the strawberries at all. My advice, follow recipe exactly and instead of mashing berries, cut them into small chunks so you have something to taste.

To Die For Blueberry Muffins

Reviewed: Apr. 23, 2006
Right out of the oven these were GREAT. But shortly after and the next morning the blueberries got "tough" and the muffin totally fell apart when lifted off the plate. The topping also falls off right away. But taste wise, straight out of the oven, GREAT! Thats why i gave them only 3 stars.

Strawberry Cake from Scratch

Reviewed: Apr. 23, 2006
I just made this cake this afternoon, and we gave it a taste. Pretty good. Moist, not too sweet(which we love that about it) and fairly easy to make. I pureed strawberries added cornstarch and powdered sugar to a saucepan and brought it to a boil to make a slightly sweet/tart strawberry filling. I then "iced" it with Cool Whip, and let it sit in the fridge while we ate lunch. Tasted very good. Tart strawberry filling and light cool whipped topping on a moist cake!!

Hamburger Steak with Onions and Gravy

Reviewed: Nov. 1, 2005
I would give it more stars, but i made a few changes and it didnt turn out so well. HA HA.....So im really not too sure as to how good it could be. Just dont do what i did. All i had on hand was italian flavored bread crumbs. And i used sweet onions. The gravy then had no savory rich flavor, it was a sweet after taste. And the only thing that i really didnt like about the recipe was the season salt. Im just not fond of it. Kinda of an artifical taste to me. Other than that, Decent.

Awesome and Easy Creamy Corn Casserole

Reviewed: Nov. 1, 2005
This was OK. It just needed some more zing of some kind. The only flavor i was really picking up was the whole kernels of corn. And i wanted more of the creamy sour cream tangy flavor.

Mom's Carne Guisada

Reviewed: Oct. 16, 2005
This was really good. Took me forever to find the type of carne guisada i was looking for. I wanted the creamy gravy like kind. Not the stewed tomato kind. I live in southeast Texas and know good Mexican food. This with a few additions was very good. I made it in my crock pot. Added a few small diced tomatoes, minced garlic and some chili powder. YUMMY. With fresh torillas. My very picky fiance` loved it. Said it was "bragable" !! Oh- I also used more flour b/c i wanted a thick creamy gravy.
