Greek Honey Cake

Delicious! I used whole wheat flour, halved the syrup, and used smart balance 50/50 butter blend. The only thing I didn't like was that there really wasn't an orange or lemon flavor. I think I'll use OJ instead of water and cut down some of the sugar for the syrup next time!

Sweet and Sour Sauce I

I had frozen meatballs and needed a sauce, and this was great! My teen boys loved it! I used pineapple juice instead of water, and 1/2 cup brown sugar with 1/4 cup white sugar as suggested by other reviewers. It was very sweet but had just enough sour to it. It was great the next day as well!

Chocolate Chip Orange Zucchini Bread

My family loved this recipe. We made one loaf and 12 muffins. I doubled the orange zest, added 3 tablespoons orange juice (fresh), a dash of cloves, doubled the cinnamon, and I squeezed out most of the juice from the zucchini. It turned out great, and we will be making it again!

Ginger Glazed Mahi Mahi

I've made this twice now, without the garlic because it bothers my son's stomach. I also marinaded it for several hours. My family loved it, with my 10 year old telling me I should make it every week, and my 15 year old skinny son who I have to encourage to eat, and is practically a vegetarian, had seconds of the fish. I served it with Uncle Bens's Ready to Eat Brown/Wild Rice. This is definitely a winner, I love not having leftovers!

Crescent-Topped Casserole

I use this recipe at least once a month, but changed it up slightly. I use jarred pasta sauce, so it is easy to kick up the flavor with garlic, chunky garden styles, spicy pepper, whatever. Instead of mixing the sour cream into the beef, I mix it with the shredded cheese and spread the mixture on top of the beef and sauce mix in the dish. Plus I add garlic powder to the butter. My boys love it!
