WOW! I substituted mangos for peaches, but otherwise made exactly as recipe stated. Awesome summer salad. This will definitely be one my my new staples. We ate on sandwiches, which I don't recommend because it was a little too juicy for the bread. But alone or on a bed of salad is perfect.

Rosie's Bok Choy Salad

OK, I didn't know what to expect with this one. We bought bok choy at a farmer's market without knowing exactly what to do with it. This was absolutely wonderful. What a surprise! Yummy. We omitted the sesame seeds (since I didn't have any on hand) and instead substituted twice as much almonds. Will definately make again. Thanks for an easy and wonderful recipe.

Teriyaki Marinade with Ginger and Garlic

I've used this on salmon and pork tenderloin and it's really senational. I wouldn't hesitate to use it on chicken as well. Yummy!

Ropa Vieja

I made this exactly as directed, except I used medium, homemade salsa instead of prepared salsa. I also made it in the crock pot instead of the oven and served it over packaged yellow rice and served black beans on the side. No leftovers in our house! Thanks!
