Enchiladas

This was a good basic enchilada recipe. It was somewhat bland, but that was a plus for my young boys. I did add taco seasoning to the meat, used corn tortillas, and used a "Mexican" blend of cheese. Again, very easy, no brainer dinner that I served with refried beans and Mexican rice.

Chunky Monkey Pancakes

I'm giving these four stars because they were easy to make (as I'd never made pancakes from scratch), cooked beautifully, and fluffed up nicely. However, I guess my kids (6 and 2) just aren't cut out for super-sweet pancakes. My six-year-old called them "disgusting" and my two-year-old ate around the chocolate. I served this with nothing but butter on top, but it was still too rich. I'll definitely keep the batter mixture and try again as banana nut or blueberry, though.

Slow Cooker Chicken and Dumplings

This has become a family staple. I first followed the recipe, but have since adjusted to my family's taste. I add seasonings, sometimes use onion soup mix instead of chopped onion, and add in baby carrots and potatoes. I also season the biscuits with a little salt and pepper, flatten, and cut into pieces. I use one can of biscuits, serve everyone, and then add in the other can with a bit more cream of chicken and water. This helps the biscuits cook better and nothing overflows (since I put veggies in)! While my hubby likes traditional chicken and dumplings, he finds the addition of veggies more filling. He loves this so much he told his mother she needed to get my recipe instead of making her traditional Tennessee recipe. My two year old and six year old boys also love this; it's very kid-friendly. Great for busy workdays...in fact we have open-house this week and are looking forward to having a warm dinner waiting for us at home.

Holiday Chicken Salad

Yum Yum! I'm a busy teacher/mom, so I used a rotisserie chicken from my grocery store, substituted halved, seedless red grapes for the cranberries (thinking my 2 yr. old would find the craisins more difficult to swallow), and omitted the onion. I had more than the 4 cups of chicken, so i eye-balled other ingredients and did add garlic powder to the mayo. Both of my boys (6 and 2) loved this with Ritz crackers and asked for seconds. My six year old even asked that I pack it for his school lunch. I loved it on toasted ciabatta bread with lettuce. This is such a keeper.

Cranberry Hootycreeks

This was a HUGE hit at work! My husband found beautiful festive jars at wal-mart for 2.50. I filled up a bunch, tied with ribbon, and sent off to work. I did separate the sugars and placed them in a ziplock bag and adjusted directions to match traditional cookie recipes. Don't know if it affected the taste but it did help to fill up those jars a bit more since they were a little large! People loved the look of jars and one co-worker brought in cookies to share...they were gone in a flash and people tracked me down to ask for the recipe. Will definitely do again.

Cream Corn Like No Other

To die for! My four year old son I devoured the pot and I can't wait to make this again! It's very rich and creamy and absolutely NOTHING like the canned mush. A must-have for our family holidays and perfect for potlucks.

Gourmet Sweet Potato Classic

Oh my word!!!! I would give this twenty stars if I could. I have never had sweet potatoes before and have nothing to compare this to, BUT I literally dreamt about this after Thanksgiving dinner. I haven't been this tempted by food since I was pregnant. The flavor and texture was amazing and went absolutely perfectly with our baked ham. Definitely, definitely making again. My mother-in-law thought it needed a bit more brown sugar but I thought it was perfect as is. Update: I now make this for every holiday using Splenda Brown Sugar mix and can't tell the difference. It's so popular with my family that I must double it every time!

Apple Orchard Punch

My four year old son loved this and he's hard-to-please! I found it okay and would drink again but it's not a must for me...possibly because I'm not much of a juice drinker. Will definitely make again for kids though.

Slow Cooker Mashed Potatoes

YUM, YUM, YUM. Great recipe that made my hubby sing my praises. I omitted the garlic since my baby was going to be eating mashed potatoes for the first time and it was still great. Have even microwaved leftovers with a pat of butter and cannot complain. First time I've ever made real mashed potatoes and was super easy for this newbie to make!

My entire family LOVED these cookies. I baked them until golden brown so that they were crispy on the bottom and moist and chewy inside. Soooo good!
