Corn and Crab Bisque

This is really a fantastic soup and relatively easy to make. We tweaked it a little for our own tastes (more garlic, more onion, more butter, more seasonings), which is what prevented us from giving it five stars. We tried it with imitation crab (great), leftover baked cod (excellent), and we think it would be awesome with shrimp.

Triple Chocolate and Vanilla Cheesecake

Wow, what a great cheesecake! It impressed my new mother-in-law so much that I am now the designated cheesecake maker for all future holidays and family functions. This is one of the easiest I have made, and I make a lot of cheesecakes...I love the use of sweetened condensed milk to sweeten the cheesecake while also adding smoothness. The only adjustments I made were to use a water bath in the oven while cooking, and to cook as directed for 40 minutes, then turn it down to 250 degrees for another 20 minutes, then shut the oven off and allow the cheesecake to cool as the oven cools down. I also did an additional darker chocolate layer on top of the vanilla (simply by adding more melted chocolate). It looked and tasted professional!

Enchilada Meatballs

These were very good, but I could only award it 4 stars because I added my own seasoning to the sauce to give it more flavor. The meatballs themselves were bland, so I would add additional seasoning to those the next time I make them--probably some cumin and red pepper flakes. Chopped onions would also be a good addition to the meat mixture. I added taco seasoning, garlic powder, and red pepper flakes to the sauce as well. Will definitely make them again!

Taco Seasoning I

Excellent! wanted tacos tonight and didn't realize I was out of seasoning packets. A quick search got me to this, and I don't think I'll ever buy packets again! I added 1/2 Tbsp flour to this mixture and 1/2 c water to browned ground turkey, simmered for 15-20 minutes--delish!!

Delicious Black Bean Burritos

These were just OK, nothing spectacular. I'm usually a fan of anything Mexican, but I'm not sure what the big deal about these burritos is. Maybe more spices and some tomatoes would spruce them up, but I found nothing great about beans with some veggies and cream cheese in a flour tortilla.

Chocolate Cherry Biscotti

Very good flavor, although the dough is a bit hard to work with--very sticky. (This is my first attempt at biscotti, so I wouldn't know if that's how it should be.) I would add more cherries next time as I found myself looking for the biscotti that had the most cherries in them..

White Chocolate Cheesecake with White Chocolate Brandy Sauce

Absolutely one of the best cheesecakes I've ever made. I will be using this as a base for a lot if other cheesecakes. I did not use the sauce, but used the cake recipe to the letter when making my holiday cranberry cheesecake. I used butter cookies for the crust, and mixed in 1/4 c butter and 1/4 c chopped dried cranberries. Then I made this cheesecake, poured it on the crust. I dolloped four spoonsful of homemade cranberry sauce and swirled it in. Bake as directed. After it chilled, I drizzled more cranberry sauce over the top, then drizzled 2 squares of white chocolate on top of that. It looked like it came from the gourmet store! Thanks for the wonderful recipe!

Chicken with Mushrooms, Prosciutto, and Cream Sauce

This dish was VERY easy to prepare and looked wonderful when it was done. So wonderful, in fact, my husband said this was something that we need to make when we have company, and that was before he even tried it! I used boneless, skinless chicken breasts, just because I wanted to lighten it up, but I can tell it would be wonderful with thighs. I also used a whole 8oz container of sliced mushrooms, and light sour cream. I also covered the dish about halfway through baking, to encourage more drippings and to help it cook faster. I thickened the sauce a bit with flour...it was perfect! Serve with a long grain and wild rice mixture, and steamed asparagus--a meal fit for a king!

Kathy's Delicious Whole Slow Cooker Chicken

Wow, this was wonderful! I followed the recipe almost exactly - just subbed lime juice for lemon because that's all I had, and I didn't use the sesame oil because I didn't have any (I can say it probably would have been even better with it). It is important to skin the chicken as instructed--I couldn't get all my skin off, and it made a bit of a mess for clean-up. After the chicken was done, I reduced the sauce a little to enhance the flavor and served it over steamed veggies (broccoli, carrots, sugar snap peas and water chestnuts). I also used some of the sauce to make my rice (subbed it for half the water)--yummy! Great recipe - thanks!

Olive Salad for Muffalettas

Excellent salad, especially for one of my favorite sandwiches! I used half kalamata and half black olives in addition to the green olives. I also added some chopped roasted sweet red pepper for color and flavor, and fresh pressed garlic instead of the dried. I've been looking for something like this ever since my friend brought home a jarred olive salad she bought in New Orleans, and this is even better! Thanks!

Best Chocolate Chip Cookies

These are excellent! I halved the recipe but otherwise followed it exactly (I used dark brown sugar and scooped them with the pampered chef mini-scooper, so still got 2 dozen cookies), and they turned out great...I had no trouble mixing the batter and thought it was the perfect consistency. My four-year-old daughter and I not only loved the batter, we loved the cookies, too! They held their shape better than any cookie recipe I've tried to date.

Rhubarb Cake I

White Cake Frosting II

One word---FABULOUS!! I made this frosting for a group, and everyone raved about it!! It tastes just like the frosting you get on store-bought cakes. I also made a chocolate version--used milk instead of water, and added about 1/4 cup cocoa, and the results were equally as wonderful!
