Bread Machine Pumpernickel Bread

Wonderful! Made my second loaf this morning. The first loaf was a bit on the dry side, and didn't rise quite as much as I would have liked. I had to shape the loaf a bit before the machine baked it, or it would have been pretty misshapen. I made a couple of changes on today's loaf. First off, I proofed the yeast in about 11/3 c. water. I followed the recipe as written, but did keep an eye on the dough to see if it looked dry. I ended up adding a couple more splashes of water and ended up with a much better looking loaf that was much more moist. This recipe is a keeper!

Basic Flaky Pie Crust

Terrible! I now remember why I've always made my crust with butter instead of shortening. Just thought I'd try something different, but this was awful. I followed the recipe to the letter, and the dough was either so sticky I couldn't get it off my pastry cloth, or so dry it crumbled to bits. No happy medium at all. I've been making pies for more than 20 years and have never had a crust turn out so badly.

Slow-Cooker Chicken Tortilla Soup

Wonderful! My picky kids loved this! The only things I did differently were to add a can of black beans, and leave out the chilis (I didn't have any) I garnished with a dollop of sour cream, some shredded cheddar cheese and some baked flour tortilla strips. YUM! This is something that I will make again and again!

Banana Crumb Muffins

This is the best banana muffin recipe EVER! My hubby (who is not big on sweets) ate at least 5 of them, and my kids devoured the rest. I made a second batch to take to the office, and everyone who had one asked for the recipe! I am already getting requests for more from my hubby and kids. This is one that I will make again and again. I did use oil instead of butter, and added 1 tsp of cinnamon and a couple of shakes of pumpkin pie spice to the batter. PERFECTION!

Banana Oatmeal Cookies I

Hummus Pizza

Wonderful! I made it using Hummus III from this site and a Mama Mary's pizza crust. We used spinach, artichoke hearts, chopped roma tomatoes, red bell peppers, and monterey jack cheese. The kids demolished it! This one is a keeper!

Blueberry Cornmeal Pancakes

Very good basic recipe! I add a little touch of honey and use vanilla soy milk. I have also added a little bit of orange extract to them which makes them out of this world. My kids love them! I use frozen blueberries and chop them up a little so they aren't lumpy. I've made these dozens of times, and they are a keeper!

Great recipe! My kids love them! Crisp on the outside and fluffy on the inside. The batter "puffs" up nicely and they are so tender and slightly sweet! A WINNER!

Cincinnati Chili I

Wow! This was great! I had never heard of Cincinnati Chili before, and thought I'd give it a whirl. We were floored by how good it was! My 6 & 11 year olds (picky eaters both) cleaned their plates and took the leftovers in their thermos for lunch today. I made it exactly as the recipe called for, but I may try cooking the meat with the broth as some others have suggested just to see how it turns out. This is a recipe I see myself making again and again.

Good Old Fashioned Pancakes

I have made this recipe at least a dozen times. I have made it exactly as written, and yes, it is a very thick batter, but that makes the pancakes very fluffy. The reviewers who have said that the centers are not done, are cooking them at too high a temperature. Those who said that the baking powder makes them taste bad need to try using Rumford baking powder, which doesn't have aluminum, which is what gives it the bad taste. I have also modified this reciped on occasion, (added vanilla), but it is excellent just as it stands. A lot of problems can be avoided with precise measuring, and using quality ingredients. Give it a try again and see what happens!

Krissy's Best Ever Corn Muffins

Wonderful! I make them with canned corn instead of the frozen, and they are great! I add a touch of extra honey and a splash of extra milk to them and they are so moist! They have been a hit every place that I've taken them.

Bread Machine Challah I

This is my daughter's favorite bread. It makes amazing french toast! Great with honey butter! I've made it in the bread machine, and also just done the dough, braided it and brushed it with egg wash before baking in the oven. EXCELLENT!

Whole Wheat Beer Bread

This is probably the best beer bread recipe I have ever tried! I've used JW Dundee Honey Brown beer, and Shiner Bock. I'd say the Dundee gave it a better flavor than the Shiner. I also added some honey as I poured in the beer (probably 1/4 cup..I didn't measure) I also poured some melted butter over the top before baking! YUM! This bread has been a big hit everywhere I've taken it and my kids love it! This will be a family favorite for a long time to come!
