Roxie's Bran Muffins

Reviewed: Oct. 1, 2013
This was a wonderful recipe. I put in half the butter and am going to try no butter next time. I also used skim milk as I don't use anything else. They came out dense and moist - just like a bran muffin should be imh. My 12 yo son and I made these together... he did all the fun stuff like mashing the banana and grating the apple. We could hardly wait till breakfast. This is definitely a keeper!

Fish Fillets Italiano

Reviewed: Jan. 9, 2012
Superb recipe - I added some fresh herbs (rosemary and oregano) and did thicken the sauce with some tomato paste. Everyone in my household loved this dish (even those who say they don't care for fish)! Also shared with a colleague and she had great results as well. Recommended!

Yum! My family really enjoyed these. I forgot the salt but still was able to get a lot of water out of the vegetables.

Outrageous Chocolate Chip Cookies

Reviewed: Feb. 10, 2011
Yummy. Quick recipe to throw together. Took a little longer to bake than 10 minutes but that might have been because of the size of my cookies. I wouldn't change anything in the recipe.

Best Chocolate Chip Cookies

Reviewed: Jan. 10, 2011
Everyone loved these at our bowl game get together. They accused me of putting something addictive in them! I left out the nuts (although I love them - not everyone does) and put a few more chips in. Seriously good cookie.

Light Wheat Rolls

Reviewed: Dec. 13, 2010
Although I didn't incorporate the spiral look, these rolls came out wonderfully. The only thing I did differently was use a little less white sugar and put in about three tablespoons of honey. I am looking forward to making another batch of these soon! Thanks for posting such a great recipe!

My family liked this - the coating ended up coming off toward the end of the baking process though. Still tasted great.

Greek Pasta Salad

Reviewed: Jun. 28, 2010
This was a great addition to our summer road trip cookout. I prepared it in the morning before we left and chilled it in the cooler...by the time we hit our first stop, it was perfect. I used Kalamata olives which enhanced the flavor of the dish.

Louisiana Crawfish Etouffee

VERY rich, but worth the splurge. I prepared as the recipe indicated. My teenage children didn't 'oooo and ahhh' but that was fine with me - made more leftovers to take for lunch!

Christmas Breakfast Sausage Casserole

Reviewed: Jan. 23, 2009
This was great - I used Cabot 75% fat free cheddar, garlic cheese croutons and 8 eggs. I prepared on Thanksgiving morning for guests, and have since made it several times for supper paired with spinach salad. Easy to prepare in the morning and pop in the oven in the evening!
