Peppermint Biscotti

Perfect!! It holds together just like a good biscotti recipe should. It's a beautiful presentation, too. I was looking for something new to make for my neighbors for Christmas. Packaged up well, it's such a nice inexpensive gift. I've tried some other biscotti recipes in the past that just haven't worked. This one definitely DOES work! It smells SO good baking.

Crumpets

There are not very many recipes for crumpets out there, but this one was GREAT! I didn't really know what to expect, but I loved them...so light and scrumptious. I will serve them with a sprinkling of confectioners sugar next time, I think. Or some honey or jam. As my husband put it--it's a cross between a really fluffy biscuit and a pancake. Having never had crumpets before, I don't know if this is what they're supposed to be like, but I did like them. I will definitely double the recipe, though. This one doesn't make enough, especially if your dough deflates a bit when transferring to the pan.

Pumpkin Cookies VII

Moist and yummy! I used canned cream cheese frosting as suggested, but I think I'll make my own next time. I found my dough impossible to roll into balls--it was too sticky! So, I just did drop cookies and they were fine. Over all a fine recipe.

Pasta Pomodoro

Fabulous!! So tasty! I added some diced cooked chicken breast into the sauce while it simmered. After reading some of the reviews that the balsamic vinegar was too strong, I only added about 1.5 Tbsp. After tasting it, I didn't find it too sour at all--I went ahead and added a little more. I used the 2 Tbsp. of fresh basil but also added about .50 tsp. of dried basil. I also used a good bit of the crushed red pepper to give it some heat. I LOVED this fresh tasting, filling dish. It was our main course. I'll be adding this to my menu!

Carol's Chicken Salad

I like this recipe. Most chicken salads taste too heavily of mayonnaise, but this one I like. I did make some changes though (to suit my pantry, mostly!). I cut out the celery, water chestnuts and swiss cheese. But I add 2 Tbs. Dijon mustard and a bit of sugar/sweetener to taste. This helps to cut the mayonnaise taste. I have also substituted fresh lime juice instead of lemon at times and this is a nice change. I make this and serve it on the Amish White Bread recipe from this site. It's always a huge hit! I have also used red grapes instead of green (depending on what I have in the fridge). Thanks,Carol! Even though I've ammended this recipe to my taste, I needed your basic recipe to start from.

English Muffins

These were just "okay". They look like English muffins, but like everyone else said, they have the texture of dinner rolls. I was not that impressed. I came out with 30 of these things, so they'll be eaten, but I feel funny eating them for breakfast since they don't really taste like English muffins. There are no nooks and crannies. They taste good, just not like English muffins.

Pepperoni Burgers

These were delicious!! My husband loved them! I served these yummy burgers without buns, but as the main dish. I also served french cut green beans, some tater-tots (for fun!) and some homemade bread. My husband asked me to make them again soon! I might add a bit more garlic, but I'm a huge garlic fan. I imagine if you upped the spices (add some Italian seasoning and more garlic, you could used ground turkey and have some pepperoni turkey burgers. I may try that next time. Please try these--you'll love them!

Mexican Turkey Burgers

These were good, but not great. I thought they could use a LOT more spices, but I do like spicy food. I found them a bit soggy--maybe I should have added a few more breadcrumbs. Still, they weren't bad.

Make Ahead French Toast

yummy!! Don't skimp on the syrup/butter that goes on top--it makes the recipe! I forgot to grease my pan and the bread stuck, so don't forget to grease your pan beforehand! It's a bit sweet for an everyday breakfast, but I'd definitely serve it on the weekend to guests!! I added a bit of cinnamon, which was great! EDIT: I tried this again, and even though it tasted great, AGAIN my bread stuck badly to my dish. I oiled it well, but I guess next time I'll have to use shortening???

Parmesan Spinach Balls

I made this for a party, and while they tasted good right out of the oven, they weren't all that good afterwards. A few people tried them at the party, but I ended up taking most of them home with me. Maybe I did something wrong, but they tasted dry and too much like spinach, and they fell apart easy.

Amish White Bread

Love, love, love this. I make this weekly, and when I serve it to someone who has never had it, they always RAVE over it. I usually have to let it rise a little longer than directed, but it's worth it. Sometimes I throw in a little wheat flour and this works well, too. Perfect bread!! EDIT: I wanted to try this in the breadmachine so that I could cut out one of the kneadings. I let the water, sugar, and yeast proof in the breadmachine (without starting it), added oil, salt, and flour, and then set the machine to the dough setting. After that is done, I pull the dough out, shape it into two loaves, and let it have it's second rising in loaf pans. Then I bake them in the oven as directed. My breadmachine does not make good shaped loaves, so I prefer the loaf pans in the oven, but the machine does a great job with all the mixing and kneading--really makes this recipe easier, if that's possible!

Chicken In Basil Cream

LOVED this recipe! My husband asked me to work it into my "rotation" of meals. I omitted the pimentos since I don't like them. To lighten the calories, I used fat-free half-and-half and added a little flour to the sauce--it was still great! I love fresh basil, so I used a bit more than the recipe called for. I will definitely make this again.

These were very tasty and fall-ish, but they tasted a little dry. The consistency was not dry, but they tasted that way. I might add a little sour cream next time to give it a little more of a moist texture.

Aussie Chicken

LOVED this dish! I left out the mushrooms because I don't care for them, and substitued lite sour cream for the mayo in the honey mustard to cut down on fat. My husband and I both loved this and have had it several times!
