Apricot Pork Tenderloin

We loved this...the only thing we left out was the salt because we are trying to cut it out of our diets. Perfectly tender, great flavor. Can't wait to make again!

Janet's Rich Banana Bread

This is darn fine banana bread. I did mash the bananas and made sure I had a cup's worth, but I followed the recipe to the letter other than that - YUM! I will probably add about 1/4 cup more flour next time because I like a little more cake-like feel. But..the flavor is awesome as is. My husband wanted some, but he is doing the P-90X plan and I made him a loaf using whole wheat flour (same amount, sifted), Splenda for baking, Egg Beaters, and I Can't Believe It's not Butter sticks. Tasted almost the same and same moisture, but oodles less fat and calories. Either way, this is awesome. Keeping this one!!

Cheesy Sausage Zucchini Casserole

This was really yummy! I hate to rate it 5 and say I made changes, but I think it would have been good as written too. We don't like canned mushrooms, so I used fresh and I used 2 cups grated cheddar because we don't do processed cheese. It's definitely a keeper no matter if you make it the way it's written or my way! :-) YUM!

Sweet and Sour Meatballs

I used frozen meatballs because it's so much easier! So...I did not know that the chili sauce was the stuff you find in the ketchup aisle. I therefore ended up using the Thai Chili sauce you find in the ethnic foods aise. This was SPICY in a serious way! Everyone loved it. The other way is yummy too, but if you want to set yourself on fire, make the same mistake I did!!

Easy Pumpkin Muffins

These are EASY and awesome just the way they are. I might not have gotten the spices right because I just guessed, but other than that, I kept everything EXACTLY the ways it was written. No oil, no eggs, just YUM. In the 2nd batch, I added nuts to them because my husband likes that - just as yummy!

Slow Cooker Beef Stroganoff I

This is an OK recipe...we doctored it alot to make it great. I added ketchup, soy sauce, olive oil, garlic, fresh mushrooms, and used cream of mushroom soup along with the golden mushroom. Make sure the stew meat is cut into larger chunks or it dries out.

It's Chili by George!!

We made this in the slow cooker and it came out awesome - cooked it on low for 8 hours. I used Spicy V8 instead of tomato juice for a little extra kick - really nice!
