Chocolate Waffles I

the family LOVED this. it made about 5 belgian waffles, and i will definitely DOUBLE this recipe next time. my husband was pouty that he only got 2 waffles! yes, he's a pig, but he knows a good waffle i guess. i did not make the sauce, just sprinkled some powdered sugar on top. i also added about 1/4 tsp cinnamon to boost the chocolate flavor, about a tsp or more of vanilla, added 2T applesauce and cut 2T of the melted butter. yummy!

Better Than Pumpkin Pie

interesting recipe!! after reading a few reviews, i added in more spices (1.5 tsp cinnamon, and maybe a double pinch of all the rest...i didn't have allspice) because i didn't want it to be tasteless. it wasn't! now that the pie is cool, it's not as solid as i think pumpkin pie is, but it's more of a 'melt in your mouth' type of taste...not as gritty as pumpkin pie (maybe b/c there's no white sugar in this?). overall tasty, but a lot more work than buying a can of pumpkin at the store.

Creamy Chicken and Wild Rice Soup

this was a pretty good soup, given the ingredients we substituted. we used 2% milk and we didn't have wild rice so instead i used a packet of veggie risotto that was about the same size/weight. i followed the directions, just substituted that for the wild rice. my husband would have preferred more rice and a thicker soup (using the heavy cream) but i was happy with the 2% milk. next time at the store, i'll get a box of wild rice and we'll try it with that. i'm sure it will be just as tasty.

Salsa Chicken

this was tasty. i used the marinade option, mixing 4T of taco seasoning and 2/3 cup water and letting our 2 chicken breasts sit in it for about 60-90 minutes. instead of oven baking it, i cooked this dish in a skillet on the stove (oven baked chicken always takes longer than the recipe, it seems to me). used a T or 2 of olive oil and put in about 1/4 cup of the marinade as well as the chicken, covered and simmered for about 20 minutes. i added the salsa in for the final 5-10 minutes and then sprinkled cheese on top as it was served. husband said it was good, it was tender and spicy enough that i wish we hadn't been out of sour cream. good recipe :)

Prego® Porcupine Meatballs

i made this tonight, most of the family enjoyed it. since i have young (picky!) children, i changed it a bit. i made the meatballs and baked them in a 350 oven for about 25 minutes and skipped the spaghetti sauce (which really isn't popular at our house). i also did not have any oregano (blush) so i used 1/2 tsp of dried basil and also used a bag of microwaveable rice instead of cooking my own. it was yummy and my husband is happy to take the leftovers for lunch tomorrow!

Pecan Pie V

i made this today and husband has enjoyed it immensely. he is the pecan pie lover in the house. this pie does not turn out as dark as a normal pecan pie, and it does puff up as it bakes, so it does fill up the pie crust well. excellent recipe if you're avoiding corn syrup!

Homemade Pancake Mix

very good! i added some soy flour (put in 1/4 cup of soy flour in the bottom of every measured cup of all purpose flour), some cinnamon & vanilla, and some wheat germ. family loved them!

Mini Cheesecakes

these were rated by my husband after they were 3 days old. sounds strange but he said they improved as they got older. ??? i used low fat cream cheese and these taste BEST if chilled. i wasn't too impressed with the nilla wafers as a crust. i think they've made them smaller in recent years and they really don't fill up the cupcake liner like they should. so i'll try making a crushed nilla wafer crust in each liner next time. i used fresh strawberries on top, pie filling is too sweet, imo. husband has requested these instead of a birthday cake this year, and he is a cake fiend, so these must be yummy!

Floating Island Punch

very good! i couldn't find orange sherbet in a pint size so i substituted mango sorbet and it was still tasty. everyone at the shower loved it and it was the perfect color to go with a 'little pumpkins' baby shower! i'm forwarding the link to 2 of the guests!

Tender Pork Roast

very good! we didn't have soy sauce so i substituated the same amount of teriyaki sauce. my husband & 5 year old loved it, husband is taking leftovers for lunch today. next time i'll try soy sauce, but i was happy with the teriyaki twist, too!

Pumpkin Bread

excellent! used 1 cup of whole wheat flour and 2 cups of white flour...1 cup of brown sugar and 2 cups of white sugar...followed the rest of the directions and it tastes wonderful! can't wait to see how it mellows overnight :)

Simple Banana Bread

this is the only recipe i use for banana bread now. i love that there's a low fat content, but it still tastes like banana bread that uses oils. i use the original recipe to make 6 jumbo muffins...yum!
