Pineapple Bars

Reviewed: Mar. 23, 2010
These turned out great! For the person who did not think there was enough crust/base..do not over mix! it is supposed to be crumbly. I also added 1 tbs lemon to pineapple, and 1 tsp vanilla to crumb mixture. I use wax paper to press into pan so no sticky fingers :)

Very good! I had to use ham as the stores out here do not carry any "specialty products" s they told me. Still turned out great. I crisped it, added shallots and yum!

Quick Quiche

It's a keeper! I used some of the reviews and cooked the onions about 2 min before adding to egg mixture. Blender is the way to mix this one. Also baked in my cast iron skillet 35 min it turned out beautiful. No need to broil.

To Die For Blueberry Muffins

Reviewed: Jul. 6, 2007
Just made these this morning. Fantastic! I did not have any trouble with the blueberries sinking-I think that was because the batter is so thick. I did take other reviewer's advise and halved the topping. My teens are enjoying as I type! I should of doubled the recipe...

Eileen's Spicy Gingerbread Men

Reviewed: Dec. 10, 2006
I mixed these up last night adding 1 tsp of each cinnamon & ginger according to some of the reviews. (We like spice) I found the dough to roll easily. (I rolled on a piece of waxed paper to limit the stickiness)The only problem is with the timing-maybe my oven is to quick but, after 12 minutes they came out like ginger snaps-good but not soft. I found 8 minutes worked beautifully!
