Apple Butter Pork Loin

Reviewed: Oct. 24, 2005
This was great. I dumped all the ingredients in the crock pot and cooked for about 7 hours. Then I took out the juice and made a gravy on the stove top. Great with mashed potatoes.

Cottage Cheese Chicken Enchiladas

Reviewed: Sep. 18, 2006
As if this recipe needs any more reviews. I changed it up slightly. I used my Crock Pot Turkey Breast recipe from this site. Used two cups of turkey meat that I chopped up fine with my Pampered Chef chopper. I mixed all of the other ingredients except onions together stuffed the tortillas and topped with sauce and cheese.

Very good and easy. This was my first try at cooking and eating asparagus. I used season salt and garlic powder as well as the pepper and grilled in a grill basket. Loved it!

Slow Cooker Chicken Taco Soup

Reviewed: Oct. 21, 2005
I was a little hesitant to try this because I am use to white chicken chili, but I thought it would be a good change of pace. I was glad that I tried it. The only change I made was to use two cans of chilli beans and no black beans (hubby doesn't like beans). We really liked this soup, it was great. I crushed the tortilla chips in the bottom of the bowl and then topped with cheese and sour cream.

This was my first apple pie from scratch so to speak. I used refrigerated pie crusts and this was great. My DH was very happy with the outcome, apple is his favorite.

Baked Slow Cooker Chicken

Reviewed: Oct. 3, 2005
Thank-you so much for sharing this recipe and tip. I've been making whole chicken in the crock pot for years, but it always falls apart and makes a mess. But with your tip about the foil, the chicken held together great for carving. I only needed to cook it for 7 hours after the 1 hour on high. I used a 6 lb roaster with a pop up timer. And I rubbed lemon pepper under the skin on the breast and sprinkled liberally all over. Thanks for sharing.

Creamy Kielbasa and Potato Soup

Reviewed: Sep. 28, 2005
YUMM! This was a big hit at my house. Even my 16 mth old wanted 2nd's. The only change I made was omiting the water and adding 1 cup shredded cheddar cheese. We like it thicker, like a stew. I cut the sausage into 1/4's (easier for baby to eat) and mashed the potatoes slightly. This will be added to my favorites. Thanks for sharing!

Kalua Pig in a Slow Cooker

Reviewed: Oct. 10, 2005
I tried this because of all the great reviews. I cooked a boston butt for 12 hours and it fell off the bone. We are having it for dinner tonight. But the couple of tastes that my husband and I had while I was shredding the meat were so yummy. Great smokey flavor. Thanks for sharing.

Camp Cornbread

Reviewed: Oct. 21, 2005
I've made cornbread this way for years. But you don't need anywhere near that much sugar. Maybe 2 TB to 1/4 cup at most. I make it in a 8" cast iron pan. Is there any other way to make cornbread besides cast iron. Anyway, thanks for the recipe.

Jamie's Minestrone

Reviewed: Dec. 5, 2006
This was great. I did things slightly different. I used all broth not 1/2 broth 1/2 water. And I used crushed tomatoes instead of the sauce. The zucchini this time of year was really expensive, so I used a frozen veggie mix that had squash, zucchini, green beans and red peppers. This worked perfectly. Thanks for the great post.

Cheese Ball

Reviewed: Dec. 21, 2006
This is very similar to my granny's recipe for cheese ball, except we add 1 cup grated sharp cheddar. The key is to drain the pineapple in a seive and then mix the ingredients and put in bowls lined with wax paper in fridge for about an hour, then use the wax paper to help form the balls and roll in nuts. Also it works better if you make two balls instead of one.

Slow Cooker Pineapple Pork Roast

Reviewed: Dec. 14, 2006
I did this a little differently. I pierced the meat and sprinkled it with season salt, garlic powder, black pepper and onion powder. I then put meat on top of sliced onions in a roaster and poured the cranberry/pineapple mixture over it. I used whole cranberry sauce. I baked covered at 350 for 1 1/2 hours or till the temp was 155 then let sit for 15 mins before slicing. Delish! Tender and great with mashed potatoes and seasoned green beans.
