Pineapple Bacon Burgers

I loved these burgers. I took ground turkey with crushed pineapple, turkey bacon, grilled pineapple rings, grilled red onion, and barbecue sauce and served on a bun. SOOO Good.

Lemon Grass Szechwan Chicken

This recipe has potential. It had ok flavor but could have been much better with a few changes. The lemon grass was overwhelming and it tasted like it was missing something. Next time I would not have processed the lemon grass and left them in big pieces then you wouldn't have to strain the sauce at the end. I would use pineapple juice instead of water to add a sweet taste to it. I also would put a few drops of water in the cornstarch before adding it to the pan. Serve with grilled pineapple and a few chunks of red bell pepper and you have a great sweet and spicy chicken.

Cranberry, Sausage and Apple Stuffing

I don't normally eat stuffing but this one is terrific and my family loves it. Even my four year old niece likes it. I use pedridge farm corn bread crumbs instead of white bread crumbs which gives it much more flavor and sauteed onions in garlic instead of leeks.

Lemon Chicken II

This is a tempura style lemon chicken that is surprisingly similar to a famous Chinese restaurant in Dallas. The sweet lemon sauce goes perfectly with the lightly fried chicken and goes great with steamed rice.

Baked Orange Roughy Italian-Style

This recipe was similar to chicken parmesan but with fish. It was very easy and inexspensive. I did use grouper instead because it was cheaper at the time and I soaked it in milk first. I used a parmesan blend that already had romano in it. It took a little over 15 minutes and served it with cous cous.

Angel Chicken Pasta

Next time don't cook the chicken as long. Forgot to double the soup. Added mushrooms and lots of white wine.

Chicken Enchiladas II

I'm from texas home of tex mex and this recipe makes some of the best enchiladas I've ever had. I did substitute the green chilis for sauteed white onion.

Thai-Style Tilapia
