Easy Cajun Jambalaya

Reviewed: Jan. 17, 2010
This was fantastic! Per others' recommendations, I added a can and a half of diced tomatoes and some cajun seasoning because I like a red jambalaya. This would be great for a party, served instead of chili. I will definitely make again!

Penne Pasta with Spinach and Bacon

Reviewed: Jan. 7, 2010
Followed the directions exactly (well, except for doubling the bacon) and YUM, this was good. I thought it might be bland, but it wasn't!

Chicken Fried Chicken

Reviewed: Sep. 28, 2009
This was fantastic! Dredged in flour before the egg and batter and added spices to personal preference. I love what the cracker and potato breading tastes like. Great texture! I'm saving this one.

Spicy Indian Chicken Curry Yummy

Reviewed: Jul. 13, 2009
I have made this recipe twice. Once following the recipe to a tee; the second time adding light coconut milk and cilantro as a previous reviewer suggested. It's "okay" as written (and very spicy if you add that whole T of red pepper flakes), but totally delicious with the coconut milk and cilantro! That sweetness really complements the spicy. I grind the clove and the cinnamon stick and also add yellow squash and whatever vegetables I have on hand in the last 5-7 minutes.

Fiery Island Pineapple Pork Chops

Reviewed: Jul. 12, 2009
My husband and I thought this was delicious. I did, however, make a few modifications. 1. Used l tsp ground ginger powder 2. Didn't have the pepper jelly, so used mint jelly from my fridge instead with a swirl of thai garlic pepper sauce. 3. Added some grilled red pepper. Yum!

Sugar Cookies X

Reviewed: Dec. 15, 2008
these were delicious. i used to make cut-out frosted Christmas cookies. they turned out very buttery, a nice mix of salty-sweet and were perfectly complemented by the land o' lakes buttercream frosting a previous reviewer recommended. my only issue was that for some reason my dough was a bit sticky so i added a whole cup of flour, which didn't alter the recipe too much. i suggest keeping the dough in the fridge that you aren't using until you roll it out so it's easier to roll. yum!

Yum! A bit mushy for my tastes, but delicious nonetheless. We will add to our list of "regulars."

Best Ziti Ever

Reviewed: Feb. 7, 2007
this was a very good recipe. instead of crumbled sausage, i used sweet italian links. i changed the serving size for 8 adults and wound up with 2 pans, or enough food for a large football team, and that was with seconds for most of us! the only thing i would change would be adding another jar of sauce. it wasn't terribly dry, but i like sauce.

Grilled Halibut with Cilantro Garlic Butter

Reviewed: Jul. 17, 2006
Delicious and easy! My husband said this was his favorite thing I've ever made. I used tilapia, as well, and added some capers to the saute pan. Served with wild rice and baked sweet potato. The flavors merged well! I'll definitely make again.

Texas-Style Baked Beans

Reviewed: Jul. 6, 2006
I LOVED these beans! They were a big hit at a cookout we had, as they have a nice mix of spicy and sweet. As a conoissuer of spicy food, I couldn't get enough. I followed the recipe to a tee, but per other user recommendation, used Jimmy Dean sausage instead of the ground beef. YUM!

Spicy Bean Salsa

Reviewed: Jun. 9, 2006
This is an easy slam dunk! I am a salsa snob and was a bit leery about the italian salad dressing aspect, but it was a big hit. Made it for myself and three grown men and we all pigged out. The only thing I did different was add cilantro. Quick and easy!

Shrimp Scampi Bake

Reviewed: Feb. 17, 2006
Did I do something wrong? I didn't think this had enough taste for my liking. It seemed like it was missing something.... more garlic? the addition of white wine? It was okay. I served with brown rice and parmesan and lots of s&p. I probably won't try again.

Honey Ribs

Reviewed: Dec. 5, 2005
These were very good. I thought they were a bit too sugary, though. Next time I think I'll use a different brand of honey mustard. I used Hellman's brand and think it may have been the culprit....

Spinach Lasagna III

Reviewed: Oct. 11, 2005
This recipe was just okay for the amount of time spent putting it all together. It was very dry. I doubled the amount of spinach added, but felt it could have even used more. I would also use more cheese and sauce. I will probably try again, but will manipulate the recipe a bit.

Blissful Rosemary Chicken

Reviewed: Oct. 6, 2005
This was indeed an intensely flavorful chicken. I followed Single Dad's idea of browning a bit in the pan before marinating. I marinated for about 24h and then popped the pan in the oven for 15 minutes. Very good and juicy with the wine sauce, but I thought a little too peppery. Next time, I'll use a bit less pepper. And Single Dad, how do you keep the rosemary from burning? The tips of mine burned, so I pulled them off and served the part in the chicken only.
