Italian Grilled Cheese
About this Cook
My name is Amber and I'm the mom of a thirty one month old monster, I mean little boy. :) I love to cook (of course) and try to cook something new at least twice a week.
My favorite things to cook
My favorite things to cook are desserts and my specialties are cookies and pies.
My favorite family cooking traditions
Sunday's in our house are 'family day's', since they're the only day that we all get to spend together. I cook a big breakfast and let the boys sleep in, as well as cook a huge family dinner, including whatever dessert is requested that week. :)
My cooking triumphs
I have finally perfected the PERFECT meal.. The most tender and sweet pork chops Marsala, the creamiest fettucine, and the most to-die-for broccoli casserole and a mouth watering apple crisp.. ..And my entire family wants the recipes!!
My cooking tragedies
None, as of yet. *crosses fingers*

D's Famous Salsa
I made this earlier tonight because my daughter's father had a few friends coming over and I wanted to whip up a quick snack for them to munch on while he grilled. I followed the recipe loosely, just getting the base down. I chopped half a large onion in big chunks, threw it in the food processor and diced them further, and added two cans of Rotel, mostly drained, and garlic powder, onion powder, chili powder and salt to taste. I had a taste and it was delicious. I will try using fresh tomatoes and garlic and play around with it a bit more next time, when I'm not in a big rush. Thanks for the recipe!

Rich and Creamy Tomato Basil Soup
Made this tonight. I sauteed some diced onion and minced garlic in a tablespoon of butter and then added 5 diced vine tomatoes, which I didn't bother peeling. I subbed 2 cups tomato sauce and two cups chicken broth for the tomato juice since I never buy it. Pureed/whipped half the soup with the basil in my Magic Bullet, Pretty good soup, but definitely way too much cream. I added half the amount called for, and it still took away from the tomato taste. I'd also definitely at least double the basil in the future. Will make again, with a few changes.

Italian Grilled Cheese Sandwiches
I've made these a few times now and they're great. I do make a few changes, though. I use wheat bread, and I layer the sandwiches like this: Garlic butter (on this site) on the outside of the bread, bread, vodka sauce on the inside of the bread, shredded mozzarella cheese, vodka sauce on the inside of the other piece of bread, bread, garlic butter on the outside of the bread. I also cook them in a skillet like a regular grilled cheese. Try them this way and I guarantee you'll love it. Will make these again and again. Thanks!
