Easy Ice Cream Cake

Absolutely fantastic!! I made it for Father's Day and everyone raved over it!! I needed A LOT more than 16 ice cream sandwiches for a 9x13 inch pan, though. I used Blue Bunny and I used about 30. Maybe Blue Bunny makes them small, but I would recommend picking up at least 24. Thanks for the recipe!!!!

Spanish Chicken

Fantastic flavor! I used chicken broth instead of bullion and water because that is what I had. I also mixed the cumin, cinnamon, and chili powder together before I added them to the dish so that the flavors spread evenly throughout the dish. I didn't add the picante at the end becuase I wantd to taste all the spices more than the picante, but it was on the table if anyone wanted it. Things I will modify next time: I may add a little extra chicken broth because the rice was not cooked in forty minutes. I had to cook it a lot longer, which made my chicken dry. Overall, the dish was very good.

Stupid Simple Roast Chicken

Elliot, thank you for submitting this recipe! It's so stupidly easy and so good!! Oh my gosh! So moist! I added pepper b/c I like it and butter to the cavity. Followed the roasting directions exactly. This is perfect. I will never fuss w/ roasting chicken at a high heat first and then turning down the heat, etc., for the last hour. They're too high maintenance and aren't even close to this recipe. This is worthy of entertaining guests with. You rock!! Submit more recipes please!!

Chinese Cabbage Salad I

I've made this twice now. The first time I made it as is, which is why I'm giving it 4 stars. The cider vinegar was way too heavy for the slaw and there was too much sugar in the dressing. Tonight, I made it with rice vinegar, slivered almonds, and less sugar (about 1/4 - 1/3 of a cup instead of 1/2). With those modifications, I think a 5 star recipe!

DELICIOUS!!! This will become a family regular! The kids thought it was a pinch spicy, but their taste buds need to become stronger and more tolerant of heat, so I will continue making as is!

Grandma's Chicken Noodle Soup

Grandma, this was fantastic and super easy for a home cooked, weeknight meal! Perfect for working moms and busy families. I didn't have any poultry seasoning, so I Googled a substitute and found this: for 1 teaspoon of poultry seasoning, substitute 3/4 teaspoon sage plus a 1/4 teaspoon blend of any of these: thyme, marjoram, savory, black pepper, and rosemary.

Tilapia Soft Tacos with Chipotle Cream

I was hoping that this recipe would be a family favorite, but it wasn't. I liked them enough, but the tacos were missing something...I'm not sure what, though. I will make them again, but I'm gonna do a little tweaking to the recipe. LOVED the chipotle peppers :) I had never used those before and will use them again!

Taqueria Style Tacos - Carne Asada

This is not authentic...soy sauce in tacos? No way!! I grew up in East LA and I've never had soy sauce in my tacos...sorry. This is a very good marinade, but it is NOT taqueria style.

Absolutely Amazing Ahi

ABSOLUTELY AMAZING...just as the title claims! Trader Joe's sells sashimi grade Ahi tuna for a very reasonable price. I called my local store and they put one on hold for me b/c they go so quickly! Thanks for this outstanding recipe!!!!

Classic Macaroni Salad

A little too sweet for my taste when I made the recipe as is. Next time I cut the sugar back to 1/2 cup and added tons of fresh veggies. I will make it again for sure! The kids loved it!!

Granny's Ice Cream

Freaking unbelievable!!!!!!!!!!!!!! I added crushed Oreo cookies to mine so that we could have Cookies N' Cream ice cream. I can't wait to make this 1000 different ways! I didn't have any "ice crystals" but, I also followed the directions and stirred it every 30 minutes. What a FANTASTIC recipe!!

Best Big, Fat, Chewy Chocolate Chip Cookie

These were very good cookies, but you absolutely must make these with at least 1/4 cup of cookie dough as the recipe calls for, otherwise they will be very FLAT and crispy. The first batch I made were 'regular' sized cookies and they turned out flat and horrible. The batch with the larger sized dough turned out fine, but still flattened while they were cooling. I even refrigerated my dough before baking as others suggested. But, these didn't have a real WOW factor for me. They tasted just like Nestle Toll House, which are great cookies. But, these were a little high maintenance and expensive for what ended up tasting like really big toll house cookies. My search for the perfect choc chip cookie continues.

Angela's Awesome Enchiladas

These were pretty good. These are not authentic Mexican enchiladas, but my family raved about them! I thought that there was way too much of the cream of chicken soup and sour cream mixture. It over powered the awesome chicken mixture on the inside and the enchilada sauce on the outside. So, next time, I will cut WAY back on that so that I can have more of the authentic flavors.

Banana Sour Cream Bread

Unbelievable! Everybody asked for the recipe. The only trouble I had was that I didn't have the same size baking dishes required for the recipe. So, I improvised with a traditional banana bread baking dish and a mini loaf pan (oh, and I HALVED THE RECIPE, TOO). I watched my bread like a hawk so that it would not burn or over cook. I wanted the perfect bread...it is worth the time and effort :) Thank you.

Caramels

This is the ONLY recipe I will ever use again. I followed it to the "gnat's eyebrow" (except I used parchment paper....so maybe the gnat's forehead) and it is PERFECTION!!!!!!!!! After 2 failed attempts at caramel from other recipes, I found this one and it is fantastic! 1. MUST have a candy thermometer that is calibrated correctly! 2. Use parchment paper. 3. Give these away as gifts because YOU CANNOT STOP EATING THEM!! Barbara, thank you, thank you, thank you!! I needed to make caramel for a fundraiser and you saved me from disaster :)

Salsa Chicken Rice Casserole

This is a decent base recipe. I made several of the changes that others mentioned in their review, too numerous to list here. Some people said too much rice, others said too little. I thought it was just the right amount. The clean up was killer! Too many bowls.

Irish Cream Bundt Cake

Simply amazing. Followed the reviews of others and poked holes, etc. Worked like a charm and I will definitely make this again, especially since I now have a bottle of Bailey's in the house...that's if I don't drink it on the rocks first.
