4H Banana Bread

Whole Wheat Banana Nut Bread

I thought it was just okay. Kinda dry and not very sweet. I only cooked it for 50 minutes and it was done. I don't think it needs one hour to bake, it would've been horribly dry and burnt.

Chicken Florentine Casserole

WAY too much cheese! WAY!! And WAY too much italian seasoning. I felt like I was having a chicken florentine pizza. It tasted good, but it's not a 5 by any stretch. A 5 should be superior and extraordinary. This is decent and even my boyfriend (who will eat ANYTHING) told me it was just okay. That shocked me.

Dump Cake II

Easy and incredible. It's even delicious enough to serve to company, but you don't have to spend hours baking! I don't care for cherries, so I use apple pie filling. Everyone wants this recipe. My sister gave it to me and I'm glad!

Pear Bread I

Very good!! Even my very picky 7 year old loved it, and I mean LOVED IT!. I used 3/4 cup all-purpose flour and 3/4 of whole wheat flour. And the family still loved it and didn't notice the difference.

Award Winning Soft Chocolate Chip Cookies

Update....I've had these two more times since the first time I had them and I really liked them. I'm just NOT a good baker so I was probably the reason why they weren't that good. But, my sister and my friend both made them and they were GREAT!!!! The first time they were kind of cakey for me.

Baked Ziti I

Sorry guys, but this dish did not do it for me. My boyfriend thought it was great, but I did not like the provolone cheese in the ziti. For me, it ruined the dish entirely. The sour cream was good and did make the dish creamy, but all in all the dish was very average.

Washabinaros Chili

This recipe deserves a 5 for creativity, orginality, and flavor. It's fantastic! However, there are somethings I would recommend. Next time I will use a tsp. of cumin rather than a TBS because cumin has a very distinct flavor and had too much of a presence for me in this recipe. I will also omit the italian sausage. I didn't like the flavor it added to the chili and felt that it was distracting. Next time I will use 2#s of ground beef. I will also use less peppers out of personal preference. We had a great time eating it, though! We served it with fresh corn on the cob and mango margaritas. Thanks for the recipe!

Easy Ice Cream Cake

Absolutely fantastic!! I made it for Father's Day and everyone raved over it!! I needed A LOT more than 16 ice cream sandwiches for a 9x13 inch pan, though. I used Blue Bunny and I used about 30. Maybe Blue Bunny makes them small, but I would recommend picking up at least 24. Thanks for the recipe!!!!

Whole Wheat Beer Bread

I don't know what I did wrong, but my bread came out VERY dense and kind of bland. I followed the suggestions of others and used 100% whole wheat flour, honey, and just 2 tsp. of baking powder. I think I will follow the recipe to the "t" next time and also use the advice of others and try the aluminium free baking powder. I used Corona Light beer this time, but I will use a much stronger flavored beer next time so that I can taste the yeast. Thanks for this recipe and I will definitely try it again.

Grilled Chicken Citrus Salad

First of it all, this was very, very good! However, I did not taste any orange flavor at all. I really only tasted the chili powder, cumin, and garlic (which are all great flavors). I even marinated the chicken for about 4 hours, thinking that the flavors would be more pronounced, but that didn't happen. I used honey instead of white sugar and added some olive oil. I will definitely add salt next time; I thought about it this time, but my dad has high blood pressure, so I didn't. But, I always like to use a pinch of salt in everything. I will make it again, but make some changes next time.

Banana Bread

I would give it a 5 for flavor and moistness!! It was very good. But, I didn't have the same size pans that she had. That is an awkward size. So, I just put it in a 9x13 and only had to bake it for about 35 minutes. I really had to be mindful of the bread so that it didn't burn. Unfortunately, because I baked it in a 9x13, it didn't have the denseness that most banana breads have. Having said all that, the flavor is incredible!! I think the butter adds to a lot of moisture to it. I'll try to find the size pan that she has. Thanks for the recipe.

Spanish Chicken

Fantastic flavor! I used chicken broth instead of bullion and water because that is what I had. I also mixed the cumin, cinnamon, and chili powder together before I added them to the dish so that the flavors spread evenly throughout the dish. I didn't add the picante at the end becuase I wantd to taste all the spices more than the picante, but it was on the table if anyone wanted it. Things I will modify next time: I may add a little extra chicken broth because the rice was not cooked in forty minutes. I had to cook it a lot longer, which made my chicken dry. Overall, the dish was very good.

Black Bean and Corn Salad II

This is very tasty, but I think you need to let the dressing sit on the salad for a couple of hours before you serve it. When I made it, I immediately grabbed a big bowl for myself. My first impression was that it had a very raw flavor to it. The spices had not yet blended together. Next time, I will thoroughly thaw the corn and add cumin. There was definitely something missing to the salad...a little more salt, some cumin, red pepper flakes, more garlic??? Anyhow, it tasted A LOT better once it sat for a couple of hours. Not as raw...still something missing, but not the uncooked flavor. I might make it again.

Greek Chicken Pasta

Like some of the other reviewers have said, I, too, will use less pasta next time. I used a pound of farfalle and the there just wasn't enough "sauce" for a pound of farfalle. I even used about 4 Tbs of olive oil rather than one and there still wasn't enough to cover the pasta thoroughly. The flavor was pretty good, but when I ate some for lunch today, I added some olive oil so that it wasn't so dry. Next time, I will also use more parsley, more tomatoes, and will use kalmata olives as others have suggested. Thanks for the recipe.

Chicken Parmigiana

4+ I also used Italian bread crumbs because regulare would not have had enough flavor. Next time I may try Panko bread crumbs. All in all, the chicken was very moist and was a HUGE hit with the family. Everyone gobbled it up. It's in the family rotation now! Thanks for sharing.
