This was the perfect way to use up my leftover Steamed White Rice from the other night! I doubled the recipe. So doubled the cooked rice amount to 3 cups, doubled the milk and used whole to make it creamier. I used 2 small eggs. Cooked it for the full 20 minutes before adding the milk/egg mixture. Added the butter and vanilla at the end but omitted the raisins and sprinkled with Pumpkin Spice, as suggested by some reviewers. Everyone LOVED it! We all wanted seconds. Except my 5 year old son, who wanted THIRDS! ;) I will definitely keep this recipe in my arsenal! Thank you!!! :)
