No Bake Cereal Cookies

I make this recipe all the time and use "cheerios" instead of rice cereal. I have never had them turn out hard and I think it's because once the sugars come to a boil I add the PB immediately and take the mixture off the heat right away. If it boils too long the sugar hardens quite a bit. You also definitely do not want to refrig. these and keep them in an airtight container, instead of leaving them uncovered. I've also tried this w/the melted milk chocolate chips, as some have sugg'd. YUMM!!!

Basic Flaky Pie Crust

This is an excellent "base" for a pie crust. The only thing I changed was replacing half of the shortening for butter. I chilled all the ingredients first and pulsed no longer than 30 seconds in processor and rolled out the dough between plastic wrap to avoid over flouring. When I use this as a crust for a fruit pie, I add a tablespoon of granulated sugar. Very flaky and great buttery flavor!Will use this recipe over and over.

Creamy Rice Pudding

This was the perfect way to use up my leftover Steamed White Rice from the other night! I doubled the recipe. So doubled the cooked rice amount to 3 cups, doubled the milk and used whole to make it creamier. I used 2 small eggs. Cooked it for the full 20 minutes before adding the milk/egg mixture. Added the butter and vanilla at the end but omitted the raisins and sprinkled with Pumpkin Spice, as suggested by some reviewers. Everyone LOVED it! We all wanted seconds. Except my 5 year old son, who wanted THIRDS! ;) I will definitely keep this recipe in my arsenal! Thank you!!! :)
