Baked Garlic Parmesan Chicken

Just amazing!! The only changes I made were to increase the oil to 1/4 cup to which I added 4 cloves of grated garlic. (We absolutely LOVE garlic!) I let this mixture stand for about 2 hours for the flavours to infuse. The chicken was tender and sooo full of flavour. A definite keeper.

Salsa Chicken Burrito Filling

Greek Pasta Salad

A keeper. Was very popular with guests, even someone who didn't usually eat pasta salads, had two helpings!! I did what some other suggested and added some crumbled feta cheese. Make sure you use a good fruity olive oil - makes the world of difference.

Sauteed Swiss Chard with Parmesan Cheese

Made exactly according to recipe and it was soooo delicious. Loved the slight crunchiness of the stems. Never eaten swiss chard before and my husband and I are now big fans!!

Baking Mix Blackberry Cobbler

Delicious!! I used my homemade substitute for Bisquick and it worked well. I also used defrosted frozen mixed berries and cut back slightly on the sugar. Perfect dessert with vanilla icecream!!!

Chicken Chimichangas with Sour Cream Sauce

Delicious!! I just cut down on the chilli powder, as that would have been far too hot for our taste. Couldn't find canned green chiles, so opted for Salsa Verde instead. Also added some of the Salsa Verde to the sour cream sauce as well as some green Tabasco as someone else had suggested. I opted for spraying the chimichangas with garlic infused oil and baked in the oven at 400 for 5 mins each side instead of deep frying. YUM!! Definitely make again.

Salmon and Spinach Fettuccine

Simply delicious!! To make things quicker I bought a fresh Alfredo sauce instead of making the white sauce with parmesan cheese, used sundried tomato pesto instead of sundried tomatoes and added some pre-cooked baby shrimp together with the salmon. Definitely a keeper!!! YUM!

Baked Custard

Delicious!! Worked perfectly. Ate the first two custards just with cinnamon sprinkled on top, then experimented and sprinkled castor sugar over the next two (made 8), torched them, and had beautiful creme brulee!! Definitely a keeper.

Best Spanish Rice

Absolutely delicious. I never add anything to rice when I cook it, so was a little wary about how this was going to turn out. So glad I did it. I only had a can of corn/bean salsa on hand. It worked out really well. Another keeper!!

Waistline-Friendly Turkey Chili

Left out the tablespoon of chilli powder. Would have made it too hot. Didn't have any green chillies, so used some pickled jalapenos. Perfect and delicious. Definitely a keeper. Served in bowls with garlic bread. YUM!!!
