Asparagus with Sliced Almonds and Parmesan Cheese

A++ for taste and simplicity! I added a dash of salt (since I used unsalted butter) and also added to the pan 2 cloves of minced garlic, tore up some fresh basil leaves, and tossed in some cherry tomatoes into the mix. The asparagus was crunchy, the tomatoes juicy...I will be making this again! Thank you!

Rosemary Chicken with Orange-Maple Glaze

I'm disappointed by how this turned out. The sauce never thickened, even after simmering/boiling for quite some time. The orange masked the maple flavor (I had gone out to buy a bottle of real maple syrup, too). The chicken was dry after being on the stove for so long. I will not be making this again.

Basil Chicken over Angel Hair

I loved this- tasted something like you would get at a fancy Italian restaurant! I used penne instead of angel hair and sauteed the chicken with the garlic (used 4 cloves instead of 1) and onion. I also used about 3T of tomato paste, and also added some oregano, dry white wine, and spinach for more complex flavor and texture.

Mushroom Spinach Omelet

Delicious! I beat together 3 whole eggs and 1T cold water (to make them fluffier). I also sauteed the veggies, took them off, and then made the omelet the traditional way (wait until the eggs are nearly cooked but still moist before adding the veggies on top, and then folding in half).

Pork Chops with Raspberry Sauce

Very impressive dish (company worthy)-- I couldn't believe how quick and easy this was! I added some garlic powder, rosemary, and parsley to the rub, and used 1T balsamic vinegar and 1T red wine vinegar in place of the 2T white wine vinegar. will definitely make again!

Blueberry Cream Muffins

5 stars (although i made modifications as suggested by other reviewers): -1/2C oil + 1/2C applesauce instead of a full cup of oil -1 1/4 C white sugar, 1 1/4C brown sugar instead of 2C white sugar -1Tbsp vanilla instead of 1tsp -3C blueberries instead of 2C -added 1.5tsp cinnamon -added some nutmeg -added 1.5 tsp baking powder -made a streusel topping to go on top (used the topping from to-die-for blueberry muffins on this site) the result was a perfectly MOIST muffin bursting with blueberry flavor! i usually don't like store-bought muffins because they are too heavy (oily) and too sweet and contain too few blueberries, but if you make these modifications, you'll get perfect the perfect blueberry muffin! I will never use another recipe again!

Raspberry White Chocolate Mousse

Since a few reviewers had commented that the raspberry sauce was too tart, I used 3T sugar instead of 2T. It was just sweet enough, but still tart enough to balance out the sweetness of the white chocolate mousse. I layered it in a champagne flute w/the raspberry sauce, then topped it with raspberry, sprig of mint, and a chocolate filigree design I made. It received a lot of compliments.

Blackened Tuna Steaks with Mango Salsa

I made this for a guest and he LOVED it! He said it was hands down the best fish he has ever eaten. It came out perfectly, still pink in the center. Definitely recommend, you won't be disappointed!

Oriental Cold Noodle Salad

this was good, but not excellent. it felt like there was too much noodle and not enough of other things, so i added some bean sprouts and sesame seed. i think some water chestnuts, napa cabbage, or bell peppers would've made for a more varied texture and more appealing appearance.

the sauce was delicious! i used asian chili paste instead of the chili sauce. as some people suggested, it was not too spicy-- for those who like it really firey, more cayenne pepper should be added.
