About this Cook
My name is Di. I love to cook; at one point in my life I was even planning on attending culinary school, but that fell through.
My favorite things to cook
I love trying out new things, but I love anything italian.
My favorite family cooking traditions
Instead of having a traditional Christmas dinner (ham, turkey, etc) we have a Cajun feast.
My cooking triumphs
Learning how to cook with substitutes and doing it right.
My cooking tragedies
I forgot I was making something once....

Tri-Color Pasta Salad
This is a good base recipe to get started with. I made a couple substitutions, though. First I used sharp cheddar (white and orange) instead of american cheese. I also added pepperoni and black olives in along with the broccoli. I found that a house Italian dressing gives it a little more flavor than classic Italian. I used two bottles; one for it to soak into over night and the second to flavor it up before serving (note you do not need to use the entire second bottle).

Grandmother's Buttermilk Cornbread
Good recipe. I cut the sugar down to 1/4 cup as I sweeten my corn bread with honey butter and the majority of my household prefers it unsweetened. Also, instead of using buttermilk (because I had none), I used 1 cup of whole milk and 1 tablespoon of white vinegar as a replacement. I've used this substitute for numerous recipes and you can't even taste the difference.

Southern Style Honey Butter
Absolutely delicious! I tripled the recipe since honey butter is a favorite throughout this household. If you're thinking about mixing this in a blender, have fun! I started out with the blender because i already had it out, but ended up switching over to the food processor because it was so thick and the blades were getting stuck on high.
