Squash Stew

sooo hot and spicy - i even reduced the spices by more than half - i think it needs even less spice - i just can't handle it - but other than that it's sooo yummy -- had i used all 2 tbsp of the chili pepper - i'd be crying right now.

i just made this - it's soooo yummy - and now i can take it camping with me - i made it on the stove at home... i used white chocolate instead of milk chocolate. this stuff rocks!

Sweet 'n' Hot Glazed Salmon

I liked this - but I found it to be rather mild - and I was hoping for it to be Hot as it claims to be in the recipe title - if I make this again I will double the amount of pepper called for and i will probably use red chili powder and some cumin if necessary. I read some other reviews that said they also like it with chicken and tofu... I'd like to try this with that as well... also, I used apricot jam in place of the nectar, dried apricots and honey - it was already sweet and chunky and it's cheaper too. thanks for the recipe.

Cake Balls

Well, I used spice cake instead of chocolate cake - but everything else the same... I found it easier to crumble it all together in my food processor - but then it became a really sticky mess. I found it easier to work with once I refrigerated it for 15 minutes or so - then I could just roll them into a ball in my hands and then I could just dip them into the melted chocolate using a toothpick - it was just so very time consuming - but they were tasty little treats... not sure i'd do this again.

Wedding Cake Icing

Yum - delicious - easy to make - everyone liked it - tastes just like the frosting from the bakery - if you've every bought a birthday cake from the bakery - that's what this tastes like - i will definitely use this icing recipe again and again!

Kentucky Butter Cake

I did an advanced search looking for a cake recipe that did not have milk... this one sounded good. But then I noticed it has buttermilk... so I used the recipe anyways, but used 1 cup of a strong brewed coffee beverage in place of the buttermilk. Ohh and did it smell good! I also used margarine in place of butter and oil in place of shortening... so my cake was more like a margarine cake... it was so moist and delicious and everyone liked it a lot - especially my friend who cannot eat milk products - yay!

Tunnel of Fudge Cake II

I'm giving this 4 stars because I like the idea of it and it was fun to make... and I would make it again, but with certain changes. I would use vanilla pudding with white chocolate chips or maybe butterscotch pudding with butterscotch chips and I'd use a different type of glaze on top. For me and my husband the cake was pure chocolate and for us it was way to rich and powerful. I took this cake to a church activity and it was gobbled up... apparently there are a lot of dark chocolate lovers at my church. So if you like dark chocolate - this cake is for you. If not, I'd say it's a good idea to try your own ideas - like I will do next time using white chocolate... Tunnel of White Chocolate Fudge - I like the sound of that!

Chocolate Bundt Cake

I didn't follow the recipe exactly - I used 1 cup margarine and 1/2 cup vegetable oil - besides that I did everything the same. It turned out tasty indeed. It is simple to make and so I like that. I am using it to make a barbie-doll cake so I liked that other reviewer said it made a lot so that I could pour some of the batter into a small pyrex bowl - for the top part of the dress. It did however, take about 15 minutes longer to bake and 85 minutes total baking time is much longer than I prefer. The cake tastes so much better the next day - it stayed moist and everyone ate it up. I will make this again. But i'll probably turn up the oven temp so it can bake faster.

Bean Soup With Kale

This was very good; however, I did not follow the recipe exactly. I just used it as a basis for doing my own thing. I used a large can of white beans in tomato sauce, added about 3 cups water and some vegetable boullion cubes, then i put in 1 tsp. dried parsley, about 1 cup frozen "boerenkool" (dutch) I'm not sure if that's kale or not - I always just assumed they were one and the same but I don't know to be honest... I also used garlic powder, oregano, basil and rosemary and finally I sprinkled in some ground black pepper. It was tasty... and besides I just couldn't imagine using 10 cloves of garlic.

Breaded, Fried, Softly Spiced Tofu

I didn't use sage - i used parsley; and i didn't use cayenne pepper - i used chili powder... but my results are the same as other reviewers... we liked it a lot. My husband even liked it - he said " i like it b/c i doesn't taste like tofu - and it's spicy - yum" And he went back for seconds... usually when it comes to tofu, he doesn't even finish his first serving... so i'd say it's definitely 5 stars and I will make it again.

it's not bad - but it's not as sweet as i like it to bed either - and i think if you're gonna call it banana banana bread - maybe add some banana extract - give it more of a banana banana flavor.

Three Bean Soup

Well - I did make changes to it - like I drained the beans and rinsed them - and then I added about a liter of vegetable broth to make it more soupy less stew-ish... it was a very nice flavor - just giving it a 3 star b/c it's not like the best I've ever had. But it's decent enough and I may make it again b/c it uses up some of my canned/dried food storage. Thanks.

Banana Bread Cookies

yum - these are awesome. I didn't use the suggested glaze though b/c I had some leftover Banana Butter Icing - which prompted me in the first place to go looking for a banana cookie recipe. The two pair together nicely. I highly recommend trying Banana Butter Icing with these cookies -- it's a pity I didn't double the recipe - oh well, I can always make more.

Vegan Red Lentil Soup

Really good. But I didn't know what fenugreek seeds were so I substituted cumin seeds - b/c that is used a lot in curry style cooking - I liked that the soup and just the right amount of spice - not too much and not too little - I think if you don't have butternut squash you could easily just used cubed potatoes as well. Although, I used the squash and I really liked the color. Also, I had to use a full can of coconut milk b/c it simmered up all the liquids very fast so I just pour the whole can in. Thanks for the recipe - I may make again :-)

Banana Butter Icing

Yummy - great with Apple-Banana Cupcakes - the only thing I did different was add 2 drops yellow food coloring... I'll post a photo of this soon. 5 stars - my new favorite frosting - better than cream cheese frosting if you ask me -- now i'd like to try making frosting with crushed pineapples - if it works with bananas - could do it with pineapples, too?!
