Salmon Patties

Reviewed: Jan. 16, 2011
this was awesome - best salmon patties I have ever had. only thing I added was 4 tablespoons of mayonnaise, and used 2 eggs instead of one. Also used crushed garlic croutons instead of saltines. Amazing!

Brown Family's Favorite Pumpkin Pie

Reviewed: Jan. 16, 2011
This recipe has become my family's favorite Thanksgiving and Christmas staple. It is a different texture, but we like it better than the traditional pumpkin pie. The texture is whipped versus dense. Make sure to use a deep dish pie shell; I add 1 teaspoon vanilla and 1 teaspoon of brandy; make sure to prepare steusel topping before putting pie in oven-there is not enough time to make streusel topping after it goes into oven.

Guacamole

For serving four, add 1/3 tablespoon cumin and 1/3 tablespoon of jalapeno pepper flakes. For a typical party serving six is a good quantity.

Flavor was good, but I must have done something wrong as it was a little dry - will make again.

Only reviewing the rub - didn't make the mop sauce, but the rub was awesome - probably could be used on any slow cooked meat or chicken.

Loved this. The flavor reminds me of the Jack Daniels bourbon sauce from Friday's. Made it on the George Foreman as well. Yum!

At 12 servings, it made almost 10 dozen 2 inch cookies. But very light airy melt in your mouth taste - this will be my go to cookie press recipe.

Kentucky Bourbon Balls

Everybody loved these - for the 2012 season I rolled some in cinnamon sugar, some in powdered sugar and some in cocoa powder. I didn't do the chocolate yet - try it in 2013.

Broccoli Casserole

Reviewed: Jan. 16, 2011
Absolutley fantastic just as it is. If you double the recipe for a big family function, use a can of cream of celery soup and one can of cream of mushroom soup instead of two cans of cream of mushroon soup. Also, mix all the liquid and spice ingredients first, then mix in the cheese, and once all mixed well, then add the broccoli. That way it is all evenly distributed as it is difficult to stir once the broccoli is added.

Tender Pork Spare Ribs

Reviewed: Nov. 15, 2013
Didn't use the rub in this recipe, but did follow everything else to the letter - the beer mixture for cooking and the cooking method. Came out super moist and fall off the bone juicy! Will make ribs this way all the time in the future.
