About this Cook
Growing up in an international neighborhood in Miami, where men and women from around the world instilled in me the flavors, textures and nuances of their individual cospmopolitan and rustic cuisines, was educational and fun in those early years, and would serve as the foundation and passion which eventually became a career. When other kids were skateboarding and surfing, I was meandering from house to house, culture to culture, where I stood on kitchen ladders because I was too small to see over the tables and counters, to watch and learn cooking secrets from around the world. I now own a prolific catering company, and incorporate all those cultures and cuisines into my international fusion menus, with a leaning toward Cuban and Southern foods.

Marinated Greek Chicken Kabobs
Other than broiling instead of grilling, I made these exactly to recipe, and they were wonderful. I'm a professional and not too many things WOW me, but when these popped up in my mailbox, I was looking for something for a luncheon for 15, and these fit the bill. Congratulations on your fabulous featured recipe, and thanks for posting!

Have been using this recipe for years and decided it was time I thank David for publishing and sharing. David, I'm a professional chef/caterer, and there's no better authentic pastitsio than this recipe, right down to the red wine vinegar. It's perfect the way it is written. For those of you who change it until it's unrecognizable, and then review it, shame on you. Prepare it the way it's written, and if you want to change it drastically ---- publish your own recipe, don't review this one.

Baked Apricot Chicken
Have added this to the repertoire of my catering company. Absolutely fabulous basic recipe, Shang! I added a 1/2 tsp liquid smoke because in catering, a char-grilled flavor presents better, but even without the addition, it's perfect in its simplicity. Thanks, Shang!
