Bird Seed Squares

I LOVE this recipe. It's the best way I've found to get plenty of raw nuts and seeds into my kids. (Baking them compromises the natural oils and makes them much less nutritious.) Tasty without being too sweet. I cut the brown sugar down to 1/4 cup, and substituted some of the oats with ground flax.

Rhubarb Cheesecake

Fantastic. I, too, added 1/4 c chopped pecans to the crust, used 4 c rhubarb, and made sure to put my pan on a cookie sheet (and was glad I did). Delicious.

Sweet and Sour Pork III

Fantastic. My husband said it was the best sweet and sour pork he's ever had. The only change I made was that I browned the pork by shallow-frying it in a regular frying pan, rather than deep-frying, and it worked fine.

Spanish Rice Original

This was really tasty. I used smoked bacon, which made a big difference (one time I did regular bacon - not so good). Also omitted olives and corn, and used a head of broccoli instead of peppers which my husband doesn't like. Done it several times now, and will continue!

African Chicken Stew

OK, so my husband & I are used to the real deal, having spent time in Sierra Leone, so I kept my expectations low. But it was Really good!! I doubled the spices (always do), so it had a good kick. Also used chicken broth instead of water, & added carrots, & used sweet potatoes rather than regular ones. Otherwise kept the recipe the same. Will definitely do it again.

Chocolate Cavity Maker Cake

Oh my goodness - this is the chocolate cake to end all chocolate cakes. :-) Pure decadence. Like others, I substituted milk for the coffee liqueur. Also cut the amount of choc chips in half, and committed the sin of frosting this cake... Worth every calorie.

Deep Dark Chocolate Cake

Warning: DO NOT attempt this cake in 2 cake-pans, as the recipe suggests. I did, and it overflowed everywhere, made a mess in the oven, burnt and stank up my kitchen. If you want a round cake, I'd suggest dividing this batter between 3 pans. I left the cake to cool 10 minutes, as the recipe says, but when I turned it out it all fell apart. :-( Plus, I don't think it tastes that good either (yes, I did put in a whole cup of cocoa powder) - rather tasteless, although the texture is good. Over all, pretty disappointing.
