I'm a high school teacher in Atlanta, GA and spend any free time that I have outside running, hiking, kayaking, or otherwise enjoying the outdoors. I am a vegetarian and love all things vegetable!
My favorite things to cook
I'll try anything once! I typically don't cook or bake things that require a lot of detail... I rarely follow a recipe, as I prefer to start with an idea and make it up as I go. I guess that's the non-conformist in me coming out.
My favorite family cooking traditions
I grew up with large gardens and all of our produce has always come from the back yard. The summertime is GLORIOUS because there's nothing like eating fresh string beans, tomatoes, etc. straight off of the vine. Anything extra is given away, frozen, or canned. Even apples, cherries, and berries, always came from the backyard... I definitely miss that living in the city :(
My cooking tragedies
My Grandma taught me how to cook and bake at a very early age. I have come to accept the fact that I will never make a pie crust like she does.

Homemade Maple Syrup
I was so glad to find this recipe when I was in a pinch. Oddly I had maple extract on hand, but I used a lot more than the recipe calls for (maybe a couple tablespoons) and also added some vanilla extract. I also found the original consistency after 3 minutes to be way too thin, so I continued to cook it for another 15 mins or so. In the future if I make this again I will start it on the stove before I mix up my pancake batter, and then it would cook up to be the perfect consistency. I would guess about 25 minutes would be sufficient.

Chewy Chocolate Chip Oatmeal Cookies
I also changed the recipe and added more flour and oats. I was nervous when the dough was a little runny/sticky, but the dough rises in the oven and they end up having a very nice shape.

Cookie Dough Hummus
I searched for recipes with oatmeal & raisins and when I saw a recipe by someone named "Serafina" I thought, "how many Serafinas can there be?" and I had to check it out.. It was so funny to see my old high school pal suggesting an awesome recipe to me!! Thanks!! I, too, am a vegetarian ( and eat lots of hummus :) ) and love this unique idea & recipe for a sweet version of my favorite snack! Thanks!!!
