This is one our family favorites. I always make 2 pans of it and freeze one for later.

Squirrel's Great Beef Steak

Reviewed: Apr. 12, 2006
My husband and I loved this recipe. My avocados, weren't quite ripe enough, so we tiny, cruncy pieces of avocado in the mix, and it was still delicious. I will be making this again. Thanks!

It was certainly easy and good, but I think next time I'll add onions and a little taco seasoning.

Last-Minute Cranberry Relish

Reviewed: Nov. 26, 2006
This was great! Quick, easy and a delicious new twist on cranberry sauce. I only had chunk pineapple, but it was still great. I'll be using this for Christmas Dinner!

Veggie Griddle Cakes

Reviewed: Dec. 9, 2006
My family enjoyed these for dinner. We had syrup on them, but I bet they'd be good with salsa and sour cream. I also added some minced rign bologna I had left over. I will definitely make again.

My husband and I enjoyed this recipe. I was hoping it would be the one the kids would like too, but they didn't.

Spinach Enchiladas

Reviewed: Jun. 5, 2007
This was really good. So much better than I thought it might be. I hoped the kids would like it, but they refused to, because they knew what was in it.

Spicy Bratwurst Supper

Reviewed: Jul. 10, 2007
This was great! I didn't have any mushrooms or jalepenos, but it was great anyway. Next time I'll add the mushrooms and some garlic, but I don't think I'll add the pepper. A great new way to use brats!

Jen's To Die For Chicken

Reviewed: Jul. 16, 2007
This was a very good version of crunchy chicken for those of us on a gluten free diet. Next time I will only use 1 cup of buttermilk and maybe add a few more seasonings.

Wasabi Mayo Salmon

Reviewed: Jul. 22, 2007
I used miracle whip and a little extra paste and it turned out great. My husband and exchange student from South Korea really enjoyed it. We happened to make the Campfire Vidalia onions and it was the perfect combo.

Broccoli Cheese Bake

Reviewed: Aug. 18, 2007
Wow! This was great. I don't really like cooked broccoli, but I enjoyed this. Even the kids did with a little rice. I didn't have the swiss, but I'm sure it would be great.

Rice-Crust Spinach Quiche

Reviewed: Aug. 20, 2007
We enjoyed this recipe. I didn't have any spinach, but it would be even better with it. I especially like the brown rice crust. It is perfect for our gluten free diet. Thanks for a great recipe!

Sweet and Spicy Popcorn

This is a great variation for popcorn. The whole family loved it! I had to double it, and I shook it in a paper bag to mix it which worked great.

Macaroni And Cheese I

Reviewed: Nov. 5, 2007
This was pretty good for my first attempt at Gluten free homemade macaroni and cheese. I used a little more cheese than it called for and I added a can of tuna. It was barely noticeable, but at least it added a little protein. It was drier than creamier, but we all enjoyed it.

Maple-Glazed Pork Chops

This was really good. The whole family loved it and had seconds. It's almost like a sweet and sour sauce, but with a good twist. I will definitely be making this one again.

Easy Decadent Truffles

Reviewed: Feb. 16, 2008
These were excellent. I made them just for the family for Valentine's Day. I probably should have made half a batch because I can't stop eating them! I used the suggestion of another reviewer to make them softer by using only 2 cups of sugar and chips. Then I melted white candy coating and dipped them. I also divided the batch into 2 and added raspberry flavoring to one and butterscotch to the other. Everyone loved them! Thanks for a great recipe.

Smokin' Scovilles Turkey Chili

Reviewed: Mar. 3, 2008
It ended up being a little spicy for most of us, but it was still really flavorful. My husband loved it. Next time I'll cut down on some of the chili powder. I didn't even add the habaneros!
