No Crust Coconut Pie

In my opinion you can 1/2 the sugar and still be okay. The pan does need to be heavily greased. Dont forget to melt the butter when making this. I agree with another reviewer...making in the blender is the best!!!! Thanks for the recipe

Cheese Corn Spoon Bread

I think other reviewers probably eat too much sugar. This recipe is fine as is -- with one exception. I use colby jack or some other kind of cheese. Mix some into the mix and put some on top during the last few minutes. As someone who lives in a higher altitude you need to check the doneness. It's not consistant in these mountains :)

Blueberry Zucchini Bread

This was absolutely delicious. We told my niece who is very picky that they were blueberry muffins. She asked for more. Now she is willing to try anything with zukes in it!! I modified the recipe as others did. The topping made it look so much better as we made some with and some without. I also made it with olive oil and it came out fine. We live in high altitude. I put some extra flour in it and it did have to cook much longer. Thanks for such a GREAT recipe.

Fresh Salsa I

I have to admit I rarely make things according to the directions. This is an excellent base recipe. That said here are some changes I would make (and have): Instead of the canned tomatoes I used about 5 mediums tomatoes to broil on the baking sheet with the garlic and about 7 - 9 diced fresh tomatoes after I pureed the broiled yumminess. Then I add 1 -3 T of olive oil (sorry to be so vague, but i know the consistancy I am looking for, Instead of sugar I use honey and I throw it all in a blender. Then I add 10 scallions and use the pulse butten to get I finer consistancy. Once I'm done with this I throw it all in a big bowl where I have placed a couple of dashes of nutmeg, 2 cups finely cut fresh cilantro, 1/4 cup fresh lime juice and the zest of 4 limes. Sometimes I season it with pepper. There it remains for several hours. This is a great make ahead recipe that I wind up canning and giving as party gifts every year. YIPPEEE!!

Mom's Applesauce Pancakes

These pancakes are yummy. I live in high altitude. Here is what I did to the recipe. Instead of the dry mix I put in 1 cup reg. flour, one tablespoon sugar, one teaspoon baking powder, a dash of cream of tartar, a dash of salt, and a dash of baking soda. I also used somone else's suggestion and put in 1 capful of vanilla (about a teaspoon) and 1 T of melted butter. My husband inhaled these. As another reviewer also mentioned I had 12 1/4 cup pancakes and one cute baby pancake. I think that nuts would be a wonderful addition. :)

Hasty Chocolate Pudding

After having leftovers of all the usual Thanksgiving faire hubby and I were wanting something different. Voila! The recipe was unbelievably easy. I have to tell you that 3 Tablespoons of cornstarch freak me out a bit and I'm going to work on solving that... however this recipe is yummy. It's just enough for four... or for my husband and I one night and we polish it off. Yes, people, it's that good. And do yourself a favor follow the recipe and add the vanilla or some other flavoring at the end. It will just enhance the yumminess of the chocolate. FANTASTIC!! No more instant for us :) UPDATE ONE YEAR LATER: still delicious. This is now a go to staple in our house! Try it today!

A Pad Thai Worth Making

While I didn't follow this recipe to the letter I thought the basics of it were right on the mark. This is a delicious dish. Some changes I made: Instead of lime juice I now use "True Lime" packets. They work great. I also omitted the green onions since I didn't have any around. In stead I used what I had which included Asparagus, Spinach, Cabbage, Carrots. YUM! I sauteed the some onion for a bit and then added the other veggies. No chicken on hand so I went with shrimp that I had already cooked and frozen when it was cheap in the market. One other change I made... My husband and I love the peanut taste. I added nearly twice the sauce like other readers and then threw in about 1/3 cup crunchy peanut butter for good measure. Try this recipe. It tastes like what you get in the Thai restaurants but 1/4 the price..and right now that's really important.

Pumpkin Cream Cheese Muffins

As an avid muffinmaker this recipe was GREAT on taste. However, my muffins ALL burned... and they cooked at the minimum time. The made 15 large muffins with plenty of cream cheese leftovers. A big thank you to the reviewers who spoke of the cream cheese not being baked in We live in the mile high city and it will take awhile for me to adjust this recipe...One more thing - I did follow other reviewers and add some spices - dashes of mace, nutmeg, and all spice. Pumpkin Pie Squares

These were blah. The crust tasted strange, too. I think if I make pumpkin bars again I will try to combine the recipes on this site. I have also seen butterscotch chips melted and then put on top may make this a wow dessert.

Popovers

This is just a good basic recipe, but we jazz it up a bit and are trying some of the others on this site. We tried making them in our convention oven and it was a NO GO so don't even try it. One suggestion my Grandmother taught me that may be helpful to those whose popovers aren't rising... Make sure the ingredients begin at room temperature. The popovers seem to develop better this way. We serve this with chicken salad in it for a nice presentation.

Cheddar Buttermilk Biscuits

I added some garlic powder and didn't use as much c. pepper and put 1/2 again as much cheese. Did everything in the blender as one reviewer suggested and then just kneaded a couple times grabbed a chunk and put in muffin tin with butter on top. These are a HUGE hit! Thanks for the awesome recipe

Hummingbird Cake IV

This is more like a mixed banana bread than a cake. Like others I subbed 1 1/2 c applesauce for the oil. I added a little bit of all spice and about 1/4 t nutmeg and an extra banana. I aslo like a darker flavor and did 1/2 the sugar as brown. I added 1/4 cup reg. coconut and 1/4 cup toasted coconut. This made 6 large muffins and 24 regular sized. Again, they didn't perk up at all and were not fluffy like cake. Next time I may add baking powder and or/ add beaten egg whites or something. If I wanted banana bread I would not have made cake.. tasted okay though

Banana Crumb Muffins

With the changes made I would rate this recipe higher but as is it's good but not great. Substitue some applesauce for the oil to make this healthier. I also didn't add all the sugar it called for. It was just too much. I scaled it down about 75%. I would also recommend adding some nuts - almonds - to the batter or the topping. As others suggested I added cinnamon and vanilla and a dash of nutmeg. I also added an egg. It made 12 muffins and one small loaf.

Cherry Walnut Bars

I used pecans instead of walnuts because I just like the taste better. The larger jar of maraschino cherries worked great. As for the icing. I used 2 Tablespoons of butter and 1 1/2 cups confectioners' sugar with the cherry juice. My mom introduced me to this recipe with the changes. This is positively one of the most delicious desserts I have had. We can't stop eating them. HELP! :)
