Zucchini Alfredo

Double the garlic, use lots of freshly grated Parmigiano Reggiano (yes, it matters), and always use fresh basil. The flavor of the dish is best when you cook the zucchini until it starts to brown. This takes a while but it's worth it. My kids absolutely love this dish and they're not fond of zucchini.

Maple Salmon

I wasn't very fond of the texture of the salmon when baked with the sauce as it instructs. I prefer a crisp crust.

Taqueria Style Tacos - Carne Asada

I made this dish for a camping trip - prepared most of it beforehand, then cooked over a fire - and it was quite good. I got mixed reviews on the salsa. I loved it as did my brother-in-law, but my sister thought it was too sweet. If I make it again I will pound the meat before marinating, though, as it was too thick for me.

Fragrant Chicken Curry

I've made this recipe many times, my kids really like it. I've never had trouble with it being too soupy, I just make sure the mixture is at a true simmer (always bubbling slightly) until it's as thick as I like. I add a bit of honey as well, since my kids prefer it that way.

Crab Spread I

The cocktail sauce overwhelmed the flavor of the crab. I used less than half of what the recipe called for. The recipe would be good for fake crab, though!

Acorn Squash with Apple

Very good! I followed the recipe for the ingredients but just filled halved acorn squash with the ingredients and roasted in the oven at 375 (covered for half of the time) until the squash was tender. Yum!

Butternut Squash Casserole

Everyone absolutely loved this, including 4 children who all said, "Yuck!" when I told them we were having squash casserole. It was very sweet, though, so next time I will cut the amount of topping in half - it didn't need much of it.

Macadamia-Crusted Sea Bass with Mango Cream Sauce

Fantastic! My boyfriend raved about this dish. I used Red Snapper because there was beautiful fresh fish at the store, and it's hard to find good fish in Colorado. We had a nice ripe mango on hand, which was definitely helpful. Because of the thin fillets I used I cooked them in the oven with the crust on them, worked great.

Spinach and Leek White Bean Soup

Very good, easy, and filling. I see that some people thought it bland. I used garlic couscous, as it was what I had on hand, and this made the soup very flavorful. Garlic is always a good addition, if you ask me!

Chicken Fettuccini Alfredo

Wonderful dish! My daughter had requested a "cheesy pasta dish with chicken", and this fit perfectly! It makes a HUGE amount, I had enough left over for another entire meal. I also used just a small amount of Italian Seasoning when cooking the chicken, and added a large handful of chopped fresh basil near the end. Personally, I think the tomatoes really make the dish - they cut through the heaviness of the sauce.

Cabbage Beef Soup

I expected this to taste like chili, and it did. It was definitely a good way to get kids to eat cabbage! 3 out of 4 kids I served this to said it was delicious (the 4th doesn't like chili). I also added more cabbage than called for, about 8 cups.

Awesome Ham Pasta Salad

Took this to a bbq and it was well-received, but I really wasn't very thrilled with it, myself. I cut down on the pickles but it still tasted like pickles and mayo to me, even two days later.
