Fresh Rhubarb Pie

Best Rhubarb Pie recipe I've ever made! I added 1/2 tsp. cinnamon and an additional Tbsp. of flour as I've always had a problem with a runny rhubarb pie in the past. Will make again!

Grilled Mediterranean Greek Pizza with Sundried Tomato Chicken Sausage

This was really good! Had on hand garlic chicken sausage so used that and otherwise followed exactly. Will make again and add the seeded olives and sundried tomatoes, perhaps some artichokes. YUM!

Peanut Butter Easter Eggs

This is wonderful! I did end up using 5 Tbsp. of half n half instead of milk. Just too dry to mix. Also an entra spoonful of p.b. I shaped the eggs in the small plastic halves, then froze. It made 21 eggs, and 7 round bon bons. I ended up using 12 chocolate squares as all of these had to be dipped and an extra 1 1/2 tsp. of shortening. My (adult) kids will love them!! Excellent filling!

Shrimp and Crab Casserole

The flavors are a wonderful mix. I halved the recipe and the next time will saute the onion with fresh mushrooms before adding to final mixture. Found the tsp. of hot pepper sauce just right - it didn't overwhelm the delicate flavors of the shrimp and crab.

Southwestern Turkey Soup

Awesome and will make again!! I did add the can of black beans as others suggested. I also lessened the cayenne pepper and chilies but that is just a personal preference. Wonderful way to use up the left over turkey and not feel like I'm having another meal of turkey leftovers.

Caramelized Pork Slices

This was awesome!! A crisp autumn day, and hot soup - perfect. I didn't realize that I did not have a large can of tomato sauce so used the small can I had, then added two cans of stewed tomatoes and one can of diced tomatoes. This one is a keeper!

Shrimp and Feta Cheese Pasta

Followed recipe exactly except for using fresh basil. Way too dry - even after adding additional oil and wine. And the pound of pasta was overload. A full package of feta cheese (6oz) was also too much for our taste. With some tweaking, this could be very good.

Beef Sirloin Tip Roast

This was soooo good. Husband came home after a long day at work and ready for something really tasty. He loved it as did I. Definitely a keeper. Followed recipe exactly except I used fresh mushrooms instead of canned. YUMMMM!!!

Happy Shrimp

How can such a simple recipe be soooo good!! I did lighten the recipe with FF half & half, 1/8 cup evaporated milk and a little cornstarch in the evaporated milk. Also sauteed the shrimp mixture in olive oil instead of butter. It was still wonderful. Thank you!

Salmon Cakes II

Excellent!! Tried baking at first - it was good but preferred sauteing lightly in olive oil with the two we had the following night. A bit more healthy. I served it with a dollop mayo,dill,and garlic sauce on top. Wow, good. Didn't have to add another egg, or anything else. Did use a better grade canned salmon that was boned and without skin.
