Italian Chicken and Chickpeas

This was really good! I did not have the chickpeas so added garbanzo beans - still wonderful. Did cut back on the "heat" and only added 1/8 tsp. of cayenne pepper and eliminated the red pepper flakes. Just a personal preference. Will make again!

Roasted Cauliflower Soup

This soup is wonderful and full of flavor. I did add 3 small (extra) cloves of garlic (we're garlic lovers) to the onion and sauteed them both together. Cold winter night here: this was true comfort food! Served with hot crusty rolls. YUMMMM!!!

Stuffed Cabbage Rolls

VERY VERY GOOD!! HOWEVER, THE NEXT TIME I WILL ADD A HALF A TOMATO SOUP CAN OF WATER AS I FOUND THE SOUP EVAPORATED BY THE END OF THE COOKING TIME.

Butternut Squash Casserole

Very good but did eliminate the white sugar as others had suggested. Also lowered the amount of margarine. Next time will reduce the cinnamon to 1/2 tsp.

Japanese Zucchini and Onions

Follow recipe exactly. Wish I'd used garlic, along with some red pepper and sesame oil. And for a more complete meal use shrimp or chicken as suggested by others. Will try one more time as I found it was a bit strong on sauce.

Flourless Chocolate Cake I

This dessert was like something I'd get at a fine upscale restaurant. Decadent, rich, totally incredible. Very high in "everything" but a perfect dessert for a group as one can only eat a very small portion. Will make for special gatherings.

Jim's Macaroni Salad

What a wonderful change from the usual "ho-hum" macaroni salad. We're in a Northeast "heatwave" so cooked this up this morning and will have for dinner w/grilled steaks. (I've already sampled it so know how wonderful it's going to be!)

Fresh Rhubarb Pie

Best Rhubarb Pie recipe I've ever made! I added 1/2 tsp. cinnamon and an additional Tbsp. of flour as I've always had a problem with a runny rhubarb pie in the past. Will make again!

Grilled Mediterranean Greek Pizza with Sundried Tomato Chicken Sausage

This was really good! Had on hand garlic chicken sausage so used that and otherwise followed exactly. Will make again and add the seeded olives and sundried tomatoes, perhaps some artichokes. YUM!

Peanut Butter Easter Eggs

This is wonderful! I did end up using 5 Tbsp. of half n half instead of milk. Just too dry to mix. Also an entra spoonful of p.b. I shaped the eggs in the small plastic halves, then froze. It made 21 eggs, and 7 round bon bons. I ended up using 12 chocolate squares as all of these had to be dipped and an extra 1 1/2 tsp. of shortening. My (adult) kids will love them!! Excellent filling!

Shrimp and Crab Casserole

The flavors are a wonderful mix. I halved the recipe and the next time will saute the onion with fresh mushrooms before adding to final mixture. Found the tsp. of hot pepper sauce just right - it didn't overwhelm the delicate flavors of the shrimp and crab.

Southwestern Turkey Soup

Awesome and will make again!! I did add the can of black beans as others suggested. I also lessened the cayenne pepper and chilies but that is just a personal preference. Wonderful way to use up the left over turkey and not feel like I'm having another meal of turkey leftovers.

This was awesome!! A crisp autumn day, and hot soup - perfect. I didn't realize that I did not have a large can of tomato sauce so used the small can I had, then added two cans of stewed tomatoes and one can of diced tomatoes. This one is a keeper!

Shrimp and Feta Cheese Pasta

Followed recipe exactly except for using fresh basil. Way too dry - even after adding additional oil and wine. And the pound of pasta was overload. A full package of feta cheese (6oz) was also too much for our taste. With some tweaking, this could be very good.

Streusel Topped Blueberry Muffins

These were wonderful and will become my regular recipe for blueberry muffins. They stayed moist and were even super the next day! Great cold or warmed up in toaster oven.
