Homemade Black Bean Veggie Burgers

Very good! I threw everything in the food processor, it was so easy! I did not add bell pepper because I am not a fan. I did add corn at the very end. I did not need to use extra bread crumbs, mine held together find without! I used Franks Red Hot Chili Sauce in and on the burgers, excellent!

Bacon Crackers

Dark Chocolate Cherry Fudge

Very good, sweet though and I did use less sugar than the recipe called for. However, I did use marshino cherries as I didn't have dried on hand. This did take more than 2 hours to firm up; I left it in the fridge overnight and it was perfect. Overall, this was a nice rich fudge and very easy to make.

Creamy Carrot Soup

This recipe was very good, but I had to add some additional spices. I tested before adding anything, and the flavor was good, I just felt that it needed a bit more. I added extra ginger and some garam masala. I did not add ANY salt, I thought the broth added enough. I also think that this would be good without adding the cream (I used half the amount of fat free half and half).

Onion Quiche

This was so simple and so excellent. The flavor was great. I used less butter, fat free half and half and a mix of shredded "Italian" cheeses. I also added some frozen carrots and peas and turkey bacon. It turned out great!

Cream Corn Like No Other

Very good! I cooked the corn with butter, salt, pepper, sugar first; mixed in the flour, then added 1.5 cups of fat free half and half and cooked until thickened and added cheese at the end. It turned out great!

Pumpkin French Toast Bake

This was really great. I did not find it too sweet and actually thought that it could have been slightly sweeter, maybe a bit more topping. I used a sparing amount of maple syrup and thought it was just right.

Creamy Chicken Peanut Soup

I thought this was just okay, but my bf loved it. I used coconut milk in place of the whipping cream and added chicken and red pepper flakes. Next time, I might try adding curry paste like other have suggested. I felt like it needed a bit more heat.

Quinoa Pudding

I made this with vanilla almond milk, but still added the vanilla. I used a bit of honey in place of the sugar, but did not need a lot due to the sweetness of the milk and banana. I also added cinnamon. Makes a nice breakfast!

Bobotie

I recently attended a dinner party at a colleague's house. He is from South Africa and made this dish and was excellent. This seemed very close to his version, although I did somewhat combine this recipe with the "Best Bobotie" from this site (used two slices of bread, sauted the onions, with the meat, and mixed all ingredients in the skillet, did not add vinegar)

South African Yellow Rice

I recently attended a dinner party at a colleague's house. He is from South Africa and made this dish and was excellent. Compared to his version, this was a bit sweeter, but pretty close. It was great mixed with the Bobotie from this site, as well. I did sub craisins, as I don't like raisins.

Ghirardelli® Magic Cookie Bars

Very good, very easy. I'd use less butter, maybe half, next time. I did use less coconut (1 C), less nuts (0.5 C), less chocolate (1 C), and I added toffee bits (1 C). I was hoping the bottom layer would caramelize a bit more.

Blueberry Dump Cake

Like someone else recommended, if you think 'cobbler', you will be more prepared for this. It was pretty good, although quite sweet and not cake like. For the cake mix to 'cook' you need to make sure the butter covers everything.

Pineapple Fried Quinoa

Curried Cauliflower

This was good. I used non-fat greek yogurt in place of the mayo, and added extra curry powder. There was a lot of extra "sauce," maybe my cauliflower was not as large as it should have been.
