Irresistible Irish Soda Bread

This was just not what I was looking for. It comes out VERY cakey, almost a cornbread texture, not really bready at all. It was very easy to make though. Thank you anyway for the recipe.

Simple and quick. Spicy, but that's easy enough to adjust by using regular pinto beans or diced tomatoes with no chilis.

Homesteader Cornbread

This really did not come out good for us at all. I followed the recipe, including the submitters tip for mixing it for 5 minutes after combining. It had a rubbery, gummy texture to it that just was not good. I did like the idea of soaking the cornmeal in the milk. I've never done that before, but now I don't know if that contributed to the bad texture. Sorry. Thank you for the recipe though.

Easy Texas Chili

This was pretty good. I let it simmer for probably 2 1/2-3 hours, and it was nice and thick. I used 2 cans of chili beans and a can of kidney beans. I had to sub crushed tomatoes for the tomato sauce, since that's what I had. Next time I might add a little cumin, since we normally like that in our chili. Thanks for a good recipe.

Roast Sticky Chicken-Rotisserie Style

This is a family favorite. So good! Don't be scared by the long cook time, with the low temperature, I've never had one come out dry. We usually do one larger chicken instead of the two smaller ones. The rub is wonderful, however it is a little on the salty side, so if you're sensitive to that, just cut it back some. Love this recipe!!

This was just ok for us. I like the idea of the baking mix being used, but I don't think it had nearly enough cornmeal, and it was very cakey. If I try it again, I think I'll up the cornmeal to a cup, and reduce the baking mix by half a cup. Thanks for the idea.

Cheesy Hash Browns

These are yummy. The last time I made them, trying to lighten them up a little, I subbed out half the sour cream for lowfat yogurt, used light sour cream, and 98% fat-free soup.I also left out the melted butter, but I never add that anyway, doesn't seem to do much but add fat. Even with all the substitutions, they still tasted awesome!! Just make sure your hash browns are fully thawed and pretty dry. I usually thaw them in a colander. We also like to add onion to them sometimes, or top with french fried onions, just for a change. Good recipe!

Mustard Based BBQ Sauce

This was really good! I added a little dash of hot sauce to it, just personal preference, and used apple cider vinegar because that's what we had. It was very good on chicken, and we also used it on sausage sandwiches with peppers and onions and it was awesome on those too. Thanks for a great (and simple!) recipe!

Onion Cheese Biscuits

These are fantastic! The onion flavor is subtle, not overpowering at all. I put them in raw, just as the recipe said. The only change I made was that I didn't put the cheese on top (it does get hard sometimes) and I had no poppy seeds. I stuck to the recipe for the most part and would definitely make them again. Oh, and I made 12 muffin sized biscuits out of this and they were plenty big. Six might be huge, I would think.

Hearty Breakfast Cookies

OK, let me qualify by saying I had to alter the recipe, but these are awesome!! I didn't have the wheat germ so I ground some whole grain oat flake and blueberry cluster cereal in the food processor and used that. I soaked the raisins in warmed apple cider just cause it sounded yummy and used the cider for the water. Subbed out half the butter for applesauce and threw in a banana when I creamed the butter and sugar. I used a regular size cookie scoop and baked for 10 minutes. Got about 5 1/2 dozen cookies. The base recipe itself sounded yummy too, so I may have to try it again when I'm better prepared. Thanks for a great idea!

Chicken Fried Chicken

This was delicious! I actually followed the recipe almost exactly, which is unusual for me. I did use boneless skinless chicken, as it's what I had. I also dredged the chicken in flour before the egg bath. Left the seasoning pretty much the same, except bumped up the pepper a bit. Wonderful chicken and even great cold the next day!

Homemade Black Bean Veggie Burgers

This recipe is awesome!! Have made it several times now, and it is a hit. Make sure to drain off the liquid from the veggies before adding. I've also noticed for some reason different brands of beans are wetter than others. If your mixture seems too soft, pop it in the fridge for a while before making your patties. It'll hold together better. These also make the best taco filling ever!!
