Tender Pork Stew with Beans
This recipe is super versatile and easy to make. I have made it in the crock pot on days I had to work and couldn't babysit the stove. Just cook it with the lid off for the last hour to thicken up the stew a little.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili
Wow! Tasty, easy, versatile, and diabetic friendly. What else can you ask for? This has to be the most successful crock pot recipe I have ever seen. It's not only ridiculously easy to make, it's ridiculously delicious! I made it as written with the single variance of adding a small can of green chilies. There are so many ways you can riff on this basic recipe, you can make it once a month for a year and never repeat the same meal. Inwouldngive it more stars if I could.

Rosemary Ranch Chicken Kabobs
This is a fantastic recipe and has made its way into our regular meal rotation. What we like about it the most is the flexibility. I want to begin by saying that I am not a big rosemary fan, however this recipe has the right combination of flavors that it satisfies both the rosemary lovers and those who aren't quite sure about it. The first time we made this, we made 3 batches: 1) using the recipe as written for the chicken kabobs (marinated for 5 hours), 2) omitted the vinegar and marinated vegetables (portobello, zucchini, bell peppers, onions) for 1 hour, 3) omitted the vinegar and worcestershire and used as dressing for tossed salad. I can't wait to try more variations. This is a "winner winner chicken dinner"!!
