I'm known for cooking many everyday meals in large quantities, as if cooking for an army or a big party! My explanation for this madness is as follows: most dishes can be divided up, then frozen or refrigerated to be served as leftovers later, so waste is really not an issue; and great food is always just minutes away thanks to the oven or microwave. Plus, it takes close to the same amount of prep and effort to make a large portion as it does a small one when initially cooking a dish. Not to mention the fact that I have always been a huge fan of leftovers!

My favorite family cooking traditions
My most memorable food events are, without question, my (now-deceased) mother's buffets, both at Christmas and Easter. These are the greatest food memories for me and the traditions continue.
My cooking triumphs
1. French Onion Soup. It took years to perfect and people have always raved over it and asked for the recipe. 2. Beef Stroganoff 3. Chicken Waldorf Salad--one of my favorites 4. Chili. I've had people offer to BUY the recipe from me! 5. Pork Roast en Croute 6. Margarita Pie (this has been published in Family Circle magazine: June 2007) 7. Cornish Hens Teriyaki (my favorite entree, bar none) 8. Pesto (If marooned on a desert island, this is the one food I'd want to have with me.) 9. Lemon Tree Chicken -- killer recipe 10. My Christmas Cookie recipe collection -- the greatest!
My cooking tragedies
I once made pitifully thin gravy to accompany a beautiful roast turkey when I invited my in-laws for dinner. I was mortified! Also, my brother always tells the story of bad sausage stuffing I made one Thanksgiving. As a result I'm banned from ever making stuffing again! (Although I totally ace the giblet gravy now!)

Janet's Rich Banana Bread
I made a double batch (I had that many bananas!), so it was four loaves at once. I followed the recipe exactly as written EXCEPT for the sliced bananas part. My bananas could NOT be sliced as they were too ripe--black, really! So, mashed took the place of "sliced"! I tested the loaves at 50 minutes and they were done perfectly. (That could be my oven, although the oven thermometer indicates my oven runs true to temp.). Anyway, this is one great recipe. The banana bread was excellent! I'll be making this recipe again, often.

Apple Harvest Pound Cake with Caramel Glaze
Made this for the big Christmas party last night. Huge hit! Really delicious... and actually, even BETTER this morning for breakfast! The caramel drizzle is great also--in fact, I've now put the caramel sauce recipe in my separate "sauces" recipe file to make it in the future with other baked goods. Even so, I think the next time I make the bundt cake I'm going to melt caramel candies and drizzle that caramel sauce over the cake--just to experiment. By the way, I didn't have Granny Smith apples on hand so I used what I had--Golden Delicious. They were a bit small so I used three instead of two. While cutting them up I added the diced apple pieces to a bowl of cold water to which I had added lemon juice. (I did this for two reasons: one, to keep the apple pieces from turning brown, and two, to help make them a little tart to more closely resemble the taste of Granny Smith apples.) I kept them cold and covered in the fridge until it was time to fold them into the cake batter with the chopped walnuts. This cake recipe is a holiday keeper!

Chocolate Zucchini Bread I
One thing I know for sure: this zucchini bread tastes MUCH better the second day! I really was not too impressed when I ate a slice just an hour after baking it. I'm glad I didn't review it then. The next day, and for the next few days, this chocolate zucchini bread was quite delicious!
