Chicken El Dermie Le Hermie

Yummy. I do it just a little differently though. I line my pan with foil for easy clean up. Spray it with some cooking oil spray. Clean my legs and put 'em in a freezer bag and put some olive oil in (I don't measure) the close the bag and swish them around in there to coat. To change up the seasonings I use a yummy lemon pepper seasoning I have sometimes.

Grilled Tilapia with Mango Salsa

This was fanFREAKINGtastic!!! It was a major hit. I was skeptical about the salsa because I usually don't eat things like that but boy was I wrong. The salsa was what set this dish off. I paired it with one of the black bean and corn salads then had watermelon for dessert. Great summer meal.

The Best Bean and Ham Soup

Best ham and bean soup I've ever had. I won't make it any differently then I did. I didn't have veg stock so I used chicken. All I had on hand but with the HUGE hambone I slowcooked for 6 hours with it before I removed it an added the carrots, onion, and celery it was awesome! I only cooked the veggies for about 2 hrs as we like them not so mushy. Excellent. Only the 3rd time I've ever tried ham and beans in my life and this one is the keeper. Oh! No tomatoes on hand so I added about 12 ounces of V8 spicy to the receipe.

Slow Cooker Beef Stew I

Fantastic base. I used a little less beef, loads of carrots, celery, potatoes, and onion. I really piled on the spices and added alot more garlic. Instead of black pepper I used cayenne, our fav. I also increased the flour to 3/4 cup because I wanted to make sure it was thicker. It was perfect. I thought I had beef broth and it was chix broth so I said to heck with it and used 2 cans of chix broth and a little water (bout a cup). This turned out perfect actually. The kind of recipe you can add or remove things easily and make it your own. We will have this again after the frozen leftovers run out. ;)

Best No-Bake Cheesecake

YUM! Next time I will double the crust because I'd like it a little thicker. Had no prob with whipping cream because I used a glass bowl that I put in the freezer for about 20 minutes to whip it in. I did that separate from the cream cheese then folded them together with the sugar. Set up fine. Great for a quick fix. Let is chill in fridge for about 18 hours before we ate any.

Fabulous Wet Burritos

These are fantabulous! My first venture at makine mexican. I'm just learning (at 40) to get into cooking more. I alway found it a hassle and not fun until recently. These were fun to make and a huge hit! We upped the garlic, onion, and instead of black pepper I used cayenne. Great food.

Best Brownies

O.M.G. These are fantastic. Here's what I did. No frosting. Doubled the recipe minus one egg and kept salt to 1/4 tsp. like someone else suggested to make them fudgier. I don't recommend beating them with the mixer. Hand mix with fork. You don't want batter too smooth. After spreading them in 9x13 pan I scattered 1/2 cup of milk chocolate morsels on top of the batter and baked for 26 mins. Perfection. I'll never buy a mix again. This was too easy.

Peanut Butter Bars I

Perfection for the sweet tooth!!! I didn't have enough butter. I only used 1 stick melted but not hot. I upped the pb for the crust just a tad to make up for not enough butter. I heated the bp for about 20 secs in the micro just to make it easier to mix and added the 1 tsp. of vanilla others had talked about. Everything worked out just fine. While I was melting a full 12 oz. bag of semi-sweets and the remaining pb I put the pan of crust in the freezer then spread the topping on when it was done melting and refridgerated. Ate about 3 pieces a few hours later and YUM!!! Perfect.

Easy Apple Crisp with Honey

Made this last night. I doubled the topping because we love it. I also had to use a 9x13 pan because a smaller one just wouldn't do. I baked it about 8 additional minutes as well since it was larger then I thought it would be. It tasted ok but the lemon juice gave it a funny taste to us. Good recipe overall we just won't do the lemon juice next time.

Crawfish Chowder

FANTASTIC!!! I'm only learning to cook because I've never been one to take the time but this recipe makes things easy. Threw this together in 20 minutes and let its flavors come together before eating. I used a small yellow onion instead of green onion because I already had some diced in a covered dish that needed used. I also went for fat free cream cheese since the 1/2&1/2 is so rich. I used 16oz. of frozen corn instead of canned because we're not fans of canned veggies. Oh, and I added one pound of shrimp. Delicious. Next time I'm going to dice a couple potatoes. We ate this up and I'll be making it again in the next month or two.

Banana Banana Bread

I tried this because it got great reviews but I didn't have the same 5 star luck. I didn't feel it had enough flavor if you can believe it. I went by the receipe in totality and can't understand where the flavor was.

Balsamic Roasted Red Potatoes

Made these tonight. They were delicious. I added more green onion and garlic as we are freaks abou it. I also left out thyme because I didn't have any. I did, however cayenne pepper the things and WOW, what a good batch of taters. The balsamic hit the mark.

Black Bean and Corn Salad II

I didn't have green onion so I diced thinly a little vadalia onion instead. This salad was a HIT! I've given the recipe to 3 people who tried it when I made it. Dad and I ate the rest up. Delicious. I'm not much of a cook so these simple items are great for me. Easy.
