Mama's Italian Wedding Soup

Deee-lish. This is a keeper. A couple of minor changes that I will keep. Added garlic powder to the meatballs. Forgot the minced onion in the meatballs, but finely diced 1/2 medium onion and added with the carrots and spinach. Added some garlic powder and a touch of dried oregano and dried thyme to broth before added vegetables, meatballs, and pasta (used tiny pasta).

Kim's Macaroni Salad

Used white wine vinegar the first time I made it and cider vinegar the second time and didn't notice much difference. Also, used 3 jalapenos (trying to use them up from the garden) and didn't find too hot - the vinegar must cut down the spice. Added green onion and celery. This is my "go to" macaroni salad from now on!!!!!

Cheesy Chicken Poblano Chowder

So yummy! Was trying to find recipes to use up some of the poblano peppers from the deck garden and this one caught my attention. A couple of tweaks...used grilled chicken thighs rubbed with the taco seasoning (recipe from this site. Really enhanced the spice flavor. Cut off 4 ears of corn on the cob (cooked) instead of canned. Used 2% cheese, but may not do next time..taste is great, but didn't seem to melt right. Overall, this recipe is awesome!

Crunchy Chicken Casserole

We are not "casserole people" but really enjoy this recipe. The recipe I use only uses 2/3 cup mayo and 1 cup of rice. Also, I just add the celery raw for super crunch. For the topping, I usedpanko with a little Italian Seasoning and garlic powder with the butter. Used low fat/low sodium soup too. Next time will add peas or broccoli to get more vegetables.

Bratwurst and Shrimp Boil

Will definitely make this again! Added a head of garlic,a couple of jalapenos, and a few sprigs of fresh thyme to the water and beer. It added even more flavor and spice. Thank you for a great boil recipe. Will add mussels or crab next time too.

Homemade Pancake Mix

I finally decided to make pancakes for my husband after 7 years of marriage. I came across this recipe and now I'll be making these frequently. So easy and very tasty (I made the plain one's). We had no problem with the directions, but strongly recommend making the dry mix part of the recipe as presented (or 2X it)to always have on hand. Then it's easy to know to add one cup of the dry mix to the 1 egg and 3/4 cup of milk.

Incredibly Easy Chicken and Noodles

So yummy! When I think of chicken and noodles this is what I think of. Thanks for sharing. I made with all low fat low sodium soups and broth. Added frozen peas during the last 10 minutes of cooking. I will definitely make this again.

Slow Cooker Stuffing

Really tasty and really easy! I excluded the eggs and only used about 2 1/2 cups of broth. I sprayed the inside of the slow cooker with Pam and stirred every half hour or so. Had no problem with sticking. Kept on low for about 4 hours. Based on other comments will probably decrease amount of butter next time. Followed seasonings/herbs to a tee. Loved this combo. Will definitely make this again.

Judy's Strawberry Pretzel Salad

Everybody loved it at Thanksgiving! I did have to use more pretzels and butter to make enough crust though. Already getting requests to make this again at Christmas.
