Blueberry Sauce

Had some old blueberries in the freezer and I used them to make this sauce for waffles. It turned out great! Easy to make. It turned out rally thick. I may not use as much cornstarch next time.

Healthy Garden Salad

I love this recipe! I think the cilantro and lime juice really adds a freshness to it. It keeps really well in the frig. I usually use a little less corn and always add some red, orange or yellow pepper.

Authentic Enchiladas Verdes

I feel like I worked on this all day today and I don't know if it was worth it. I did not fry the tortillas, just warmed them in the microwave for a few seconds to soften them up. My ingredients were kind of cold so I put the enchiladas in the oven just until the cheese melted.

Brick-Oven Pizza (Brooklyn Style)

Stirred this up yesterday and we had the pizza for lunch. Loved the crust. I baked it on my stone which was heated to 500 degrees. I used just a bit of sauce on the pizza before the fresh mozzarella. I used a sliced roma tomato, italian seasoning, fresh mushrooms, and diced ham. I put the fresh basil on when I pulled it from the oven. I put the second part of the dough in the freezer - hope that one turns out as good as the first.

Milly's Oatmeal Brownies

I made these with chocolate chips and walnuts. The brownies sunk after they were baked but this was not a problem. They are soft, chewy, and yummy. Like a really soft oatmeal cookie bar!

Cheesy Amish Breakfast Casserole

This was wonderful! I added some red pepper and some thawed frozen spinach. I made a 1/2 recipe and used 5 eggs and baked it for about 45 minutes.

Artichoke and Roasted Red Pepper Dip

Sausage Balls

These just didn't do it for me. I mixed everything my mixer - so they were easy to form into balls. But they just kind of tasted like dough balls when baked. Maybe I overmixed or maybe the sausage wasn't the right kind, but I don't think I will make them again.

very nice muffin! I cut the brown sugar to 1 c. and used 1/4 c. of unsweetened applesauce and 1/4 c. melted butter. topping adds a nice crunch!

Triple Berry Crisp

I cut the crisp recipe in half but still used all of the fruit in a 9 x 9 pan. Used blueberries, raspberries, and peaches. Only used 1/2 c. butter and cut down on the brown sugar. Tasted fresh and summery!

Clark's Quiche

First time I made quiche and it turned out great. Made the recipe without the bacon and added some chopped red pepper. Used low fat sour cream. Did not cook the frozen spinach firs - just thawed and dried. I par-baked two quiches in frozen store deep dish crusts for 20 minutes and now I have them in the freezer. There was filling left so I baked that in a small casserole dish. Hubby and I ate that for dinner. Yum. Yum!

Soft Oatmeal Cookies

Nice soft cookie. Cut shortening to 3/4 c. and white sugar to 3/4 c. I used a small scoop to dish them out, did not flatten Added 1/3 c. chopped nuts. Added white chips and dried cranberries to 1/2 the batter.

Szechwan Shrimp

this is a keeper! I read reviews and did the following: I doubled the sauce recipe, used raw shrimp, and also added carrots, pea pods, and mushrooms to the mix. Hubby and I both loved it!

Herb-Stuffed Red Peppers

This earned 2 thumbs up at our house. I don't like green peppers but these were so much sweeter. I microwaved 3 peppers for 3 minutes and that seemed to be just the right amount after they were baked - slightly firm, not mushy. And the recipe did make plenty of filling for 3 large peppers. I did not use the allspice but threw in a handful of frozen corn to the mix. Used a Mexican mix shredded cheese for the melting at the end.

Country Apple Dumplings

Add me to the list of those who loved this recipe. I followed others advice to cut down on fat and sugar. I used lowfat crescents, 1/2 c. white sugar, 1/2 c. brown sugar, and only 1/2 cup better. I also cut apple into sixths. Terrific!

Hariton's 'Famous' Vegetarian Casserole

Great recipe. Can't beat it with all of the fresh stuff. I reduced it to one 9 x 12 pan and used asparagus instead of eggplant. Very adaptable.
