Quick Couscous with Raisins and Carrots

I used whole wheat couscous and found the combination of sweet and savory very pleasing and intriguing. I really enjoyed this dish. I used all water though because I didn't want to open a can of chicken broth just to take 1/2 cup out. I used golden raisins.

Pan-Fried Wild Salmon

Can't get any simpler than this. It works. It's straight forward. Crunchy skin, beautifully cooked inside. If all you want is plain salmon, this is it.

Crispy Potato Pancakes

It's my first time having potato pancakes so I don't have anything to compare these to but I can say that I enjoyed them very much, were easy to make and will very much likely prepare them again in the near future. I served them with applesauce because it sounded healthier than sour cream but I'm sure they'd be delicious with the sour cream as well. For me, these came out thin, crispy on the outside and softer on the inside.

PERFECT cookie! I wasn't sure if I needed salted or unsalted butter so I used a stick of each. I'd say either do that or use all salted, in my opinion. I added about 1/4 teaspoon of vanilla with the butter/sugar mix. Did it need it? Probably not. I think it would have been perfect without it too. They took 12 minutes for me. I used raspberry preserves and apricot preserves. Delicious and SO simple. I didn't have to refrigerate the dough, it was perfect to make the balls right away. I got 51 cookies out of the dough.

Carne Asada Tacos

I cut the top sirloin in very small pieces and used an already made salsa verde instead of preparing the sauce as indicated because I could not find canned tomatillos. I served the meat (which does cook in a minute) with the sauce, avocado, onions, tomatoes and cilantro on warmed white corn tortillas. Excellent.

Umami-Rich Lasagna

Flavorwise, this recipe is really good. Different, of couse (I can already predict that some people will complain about it not being authentic, sigh). I did have some issues with the measurements. I cooked the entire 16oz package of lasagna noodles but only ended up using about half of them. I had a 9X13 dish, but did not come up with enough filling to justify using all of those noodles. The sauce I used was Classico Tomato & Basil which was excellent. I measured the cup of mushrooms after chopping them, and ended up using about 2/3 of an 8oz package of button mushrooms. I should have chopped the entire thing. So, I followed the recipe as written except for using less noodles. The lasagna did not come up thick enough as in the picture. A smaller dish would have worked too. I did notice that the recipe says "spread a layer of MEAT sauce...", and I wondered if that was a mistake or just the way to refer to the mushroom sauce (as mushrooms are often used as meat substitutes) or if they forgot to post an additional ingredient. It's a bit misleading. SO, overall this was good but needs some volume (more filling, probably more mushrooms) or to be done in a smaller baking dish with less noodles.

Chunky Potato Soup

Excellent even without the cheese. I had cheese but forgot to add it. I didn't have celery but I added some celery seeds and that worked perfectly too add that celery flavor to the soup. I used skim milk and it was perfect. Thanks!

Creamy Goat Cheese and Honey

I didn't measure anything, used honey chevre from Trader Joe's, rolled in pecans I had crushed in the food processor with the cinnamon, drizzled with honey and crushed some dried rosemary in the palm of my hand before sprinkling on top. Really cute and yummy stuff. Thanks!

Tequila Fruit Dip and Dressing

This is creamy and yummy. I dipped fruit in it. Would go great with a salad that has fruit in it and sweet nuts, in my opinion. I can tell there's tequila in it. It could use a bit more sugar still since the tartness of the sour cream and lime juice still comes thru strongly.

Original NESTLE® TOLL HOUSE® Dark Chocolate Chip Cookies

Absolutely yummy! The whole family liked them. I made the pan cookie variation because I wanted to cut them squared just to make them look different like the average cookie. Here I am eating one THREE days after I baked them and it is still great! I keep my cookies sealed in a container for freshness. I love the dark chocolate morsels. I saved some of them and some of the nuts to sprinkle on top of the dough so they'd look prettier after baking. Will definitely make again.

Chicken and Broccoli Alfredo

A quick and easy dinner that is fairly flavorful. I didn't care much about the way it looked and it could have used a little more spices. I used 1 1/2 cups of broccoli and could have even used more. Overall, a fair dish.

Garlic Anchovy Linguine

First time I ever cook anything with anchovies in it. I was pleasently surprised by the simplicity of the recipe and the flavors in it. Very good. Not bland at all. The saltiness of the anchovies it's all this dish needs. I only used 4oz (instead of 6oz) because I was afraid of overpowering the dish with the anchovies flavor but that wasn't the case. I think 6oz would be just fine as well. Will make again.

Milly's Oatmeal Brownies

So good it makes you want to say it with your mouth full! I halved the recipe, used an 8X8 pan, added some pecans and some milk chocolate chips. I didn't over do it though because I really wanted to taste the oatmeal in them, which I love. I predict my husband and I will *magically* make them dissapear in the next two hours. Thanks Milly!

INCREDIBLE Raspberry Cheesecake Cookies

I bought the raspberry chips/tidbits online from The Prepared Pantry. This is not much of a recipe since all you are doing is replacing butter for cream cheese to an already made cookie mix. The artificial flavors really come through and they aren't even half as good as Subway's BUT, they will do in the meantime until I can come up with a recipe for the real thing. The texture is really cake-like, not really a cookie.
