Peanut Butter Banana Smoothie

This was perfectly delicious. We are really into almond butter and almond milk lately so I subbed those for the milk and peanut butter. I had it for breakfast and was very satisfied with it. Though I did use the honey, it might not even be necessary. The little sip I took before adding the honey was really great as well. Thanks for sharing!

Pineapple Salsa

We loved this salsa over orange roughy. I didn't have jalapeno peppers, used lime juice instead of lemon and added diced jicama for crunch. It was great.

Blueberry Pie Pops

Very yummy and fairly easy. Though I was feeling a bit lazy so I didn't form the cups. I made them flat. By making the cups you'd get more filling which would have been better. They looked really pretty anyways.

Fried Ice Cream

I enjoy fried ice cream very much. It is one of my favorite desserts. Although this recipe is very similar to what you would get at a Mexican restaurant, I've found a way to make this dessert without frying it and with much more flavor. In a medium heat skillet, I combine 1/4 cup butter, 1/3 cup flaked sweetened coconut, 1/3 cup chopped pecans, 2 tablespoons brown sugar, 1/2 teaspoon ground cinnamon and 1/2 cup flour. I stir everything until crumbly and golden brown. Then, I let it all cool down. I make the ice cream balls and roll them in the crumbly mixture and put them in the freezer covered until ready to serve. Then, I drizzle them with honey. I think this way is easier and has a lot more flavor.

Smooth Sweet Tea

Excellent!! I made it with Rooibos South African tea, which I love hot. Since it is getting so hot out now I figured I'd try it cold. This recipe worked perfectly as is. No changes at all. Thanks for sharing!

Chef John's Spaghetti alla Carbonara

Surprisingly, I've never had spaghetti alla carbonara before. So, I don't have anything to compare this to. I know where I can buy pancetta at but it was too far away and I was feeling lazy. So, I used thick bacon. I, like chef John in the video, used whole wheat spaghetti. I enjoyed this simple dish even though I messed up a little and my cream curdled a bit. I didn't lower my heat as low as I should have and I didn't constantly stir. So, do as Chef John said!!! :o)

Raspberry Pain au Chocolat (Raspberry Chocolate Croissants)

These are great. I've made them as instructed in this recipe but I've also made them a bit different with great results. I have used chocolate chips instead of the spread and cut the pastry in circles rather than squares. However you decide to make them, these are really cute, nice and flaky, easy and they look elegant.

Olive Oil Dip for Italian Bread

SO good! My garlic was sprouting :o( so I was forced to use the powdered stuff. However, I was still impressed by the awesome flavor of this dipping oil. I only made half of the recipe and cut the balsamic vinegar down a tad. I figured I could always increase it if I felt it needed it but I wouldn't be able to take some out if I felt it was too overpowering. So, I suggest you do the same and adjust it to taste. Oh, I added a pinch of kosher salt. Awesome!

Boston Cream Pie Minis

Super easy. Cute. And, considering they come from a box, they were very tasty. The only downfall is that they are obviously from a box mix and I'm not a big fan of that peculiar taste. Otherwise, great!

Delicious! I used skim milk and light sour cream. I forgot to brush the egg and milk on top but I did sprinkle some sugar on top before baking. I didn't have any currants so I used some strawberry tidbits I had laying around. Very simple and very good!

Thai Cucumber Salad

Very good! I was pleasantly surprised with this salad. I added a bit of crushed red pepper for a bit more spiciness and for color. Thinly sliced red onion would be great.

Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce Over Linguine

We loved the Al Fresco sausages and this was a great dish. In the future I might completely eliminate the cream to make it healthier and prettier-looking. I don't care much for the pinkish hue that the cream mixed with the tomatoes create. It is delicious, regardless, but I will probably skip it when I make this dish again.

Italian Chicken Sausage Stuffed Portabellas

Al Fresco chicken sausages are really delicious. This is a great dish that is easy, looks pretty and tastes wonderfully. My husband doesn't like cream cheese but he said he doesn't mind it at all when used this way. I drained the liquid that the portabellas yielded before serving them.
